Abstract

Surabaya merupakan kota terbesar kedua di Indonesia, dengan jumlah penduduk yang terus berkembang. Kenaikan populasi berkaitan langsung dengan pengembangan pemenuhan kebutuhan gizi, termasuk konsumsi protein hewani. Ayam broiler merupakan salah satu jenis unggas yang menyediakan kebutuhan protein hewani paling signifikan. Data statistik dari Pemerintah Kota Surabaya tahun 2022 menunjukkan adanya peningkatan konsumsi ayam broiler dari 7,87 kg/orang/tahun menjadi 9,28 kg/orang/tahun pada tahun 2021 di Surabaya. Industri ayam broiler memiliki tiga elemen penting: peternak, rumah potong ayam, dan pasar. Rumah potong ayam didesain untuk mengolah kelompok ayam menjadi daging ayam untuk konsumsi masyarakat. Rumah potong ayam berperan penting dalam mengatasi masalah kelebihan pasokan dengan merencanakan kapasitas produksi yang sesuai. Lokasi rumah potong ayam memengaruhi biaya transportasi untuk logistik masuk dan keluar. UD X adalah salah satu rumah potong ayam yang beroperasi saat ini dan terletak di Sidoarjo. Lokasi optimal untuk rumah potong ayam adalah dekat dengan peternakan ayam karena proses produksi mengalami penurunan berat sebesar 33,3%. Namun, lokasi UD X jauh dari peternakan ayam dan dekat dengan pasar. Terdapat tiga alternatif lokasi rumah potong ayam, yaito Gresik, Sidoarjo, dan Mojokerto. Penelitian ini menggunakan metode Mixed Integer Linear Programming untuk menentukan jumlah, lokasi, dan kapasitas rumah potong ayam melalui alokasi permintaan yang optimal guna mencapai total biaya minimum.
Berdasarkan hasil optimasi, keputusan mengenai jumlah, lokasi, dan kapasitas paling optimal untuk rumah potong ayam adalah Gresik dan Mojokerto, dengan total kapasitas produksi sebesar 101.128 kg, yang terdiri dari 71.111 kg (Gresik) dan 30.017 kg (Mojokerto). Rumah potong ayam di Gresik mengalokasikan ayam broiler per tahun dari Ujungpangkah dan daging ayam setiap tahunnya ke M1, M2, M3, M4, M6, M7, M8, M11, dan M12. Sementara itu, lokasi kedua di Mojokerto mengalokasikan ayam broiler per tahun dari Wringinanom dan daging ayam per tahunnya ke M1, M5, M9, dan M10. Optimasi masalah dalam penelitian ini menghasilkan total biaya minimum sebesar Rp.11.127.455.406/tahun. Analisis sensitivitas menunjukkan bahwa perubahan permintaan memengaruhi keputusan mengenai jumlah, lokasi, dan total kapasitas rumah potong ayam. Selain itu, perubahan jumlah pasokan, biaya logistik, dan biaya sewa juga merupakan variabel yang secara signifikan memengaruhi alokasi ayam broiler dan daging ayam ke lokasi tujuan

Surabaya is the second largest city in Indonesia, with an ever-growing population. Population increase is directly proportional to the development of the fulfilment of nutritional needs, including protein animal consumption. Broiler chicken is one of the poultry that provides the most significant animal protein needs. Data statistics of Surabaya Municipality 2022 show an increase in broiler chicken consumption from 7.87 kg/capita/year to 9.28 kg/capita/year in 2021 in Surabaya. The broiler chicken industry has three essential elements: farmers, chicken slaughterhouses, and markets. A chicken slaughterhouse is designed to process chicken groups into chicken carcasses for public consumption. Chicken slaughterhouses have an important role in overcoming the oversupply problem by planning suitable production capacity. The location of the chicken slaughterhouse affects transportation costs for inbound and outbound logistics. UD X is one of the currently operating chicken slaughterhouses located in Sidoarjo. The optimal location of a chicken slaughterhouse is near a chicken farm because the production process has a weight loss of 33.3%. However, the location of the UD. X is far from the chicken farm and near markets. There are three alternative locations of chicken slaughterhouses, namely Gresik, Sidoarjo, and Mojokerto. This research uses the Mixed Integer Linear Programming method to determine the number, locations, and capacity of chicken slaughterhouses through optimal demand allocation to achieve minimum total cost.
Based on the optimization result, the decision on the number, location, and capacity of the most optimal chicken slaughterhouse is Gresik and Mojokerto, with a total production capacity of 101,128kg which is 71,111kg (Gresik) and 30,017kg (Mojokerto) respectively. The chicken slaughterhouses in Gresik allocates chicken broiler per year from Ujungpangkah and chicken carcasses yearly to M1, M2, M3, M4, M6, M7, M8, M11, and M12. Meanwhile, the second location in Mojokerto allocates chicken broilers per year from Wringinanom and chicken carcasses per year to M1, M5, M9, and M10. The optimization of the problem in this study resulted in a minimum total cost of Rp.11.127.455.406/Year. Sensitivity analysis shows that changes in demand affect decisions on the number, location, and total capacity of chicken slaughterhouses. In addition, changes in the number of supply, logistics cost, and rent cost are also variables that significantly influence the allocation of chicken broilers and carcasses to the destination location.
