Abstract

Konsumsi kopi di Indonesia dan dunia selama 10 tahun terakhir ini menunjukkan kenaikan yang signifikan. Hal itu membuat persaingan bisnis di pelaku industri kopi semakin ketat. Asosiasi Kopi Wonosalam Jombang melalui koperasi kopinya menjadi salah satu pelaku industri kopi perkebunan rakyat yang menjalankan proses bisnis khususnya pada aktivitas supply chain mulai dari perkebunan, pengolahan pasca panen, sangrai, hingga distribusi kopi ke konsumen akhir. Bagi Koperasi Kopi Wonosalam memerlukan suatu upaya manajemen risiko untuk bersaing dengan pelaku industri kopi lainnya. Penelitian ini dilakukan sebagai upaya penerapan manajemen risiko dengan identifikasi, analisis, serta penanganan risiko aktivitas supply chain pada Koperasi Kopi Wonosalam. Identifikasi proses bisnis Koperasi Kopi Wonosalam menggunakan model Supply Chain Operations Reference (SCOR) yang meliputi proses plan, source, make, deliver dan didapatkan 23 aktivitas proses bisnis supply chain meliputi 3 aktivitas pada proses plan dan source, 16 aktivitas pada proses make, serta 4 aktivitas pada proses deliver. Analisis manajemen risiko penelitian ini menggunakan metode House of Risk (HOR) yang terdiri dari 2 fase. Pada model HOR fase 1, didapatkan kejadian risiko (risk event) sebanyak 50 kejadian risiko, dimana 13 kejadian risiko di proses perkebunan dan panen, 13 kejadian risiko di proses pengolahan pasca panen, 3 kejadian risiko di proses penyortiran, 10 kejadian risiko di proses pemanggangan (roasting), 6 kejadian risiko di proses penggilingan, serta 9 kejadian risiko di proses pemasaran dan penjualan serta didapatkan agen risiko (risk agent) sebanyak 29 agen risiko. Hasil dari diagram pareto 80:20 dan permintaan dari pihak koperasi didapatkan total 10 penyebab risiko prioritas yang ditindaklanjuti untuk diberikan tindakan pencegahan risiko. Pada model HOR fase 2, diberikan 21 tindakan pencegahan risiko untuk mengurangi kemungkinan terjadinya penyebab risiko. Beberapa rancangan rekomendasi lebih lanjut dari penelitian ini adalah mengenai SOP Keamanan, Keselamatan, dan Kesehatan Kerja (K3) serta penyusunan rancangan mekanisme alat sortir ceri kopi berdasarkan warnanya.

In the last 10 years, there has been a significant increase in coffee consumption in Indonesia and around the world, leading to increased competition in the coffee industry. Asosiasi Kopi Wonosalam Jombang, through its coffee cooperative, is one of the players in the coffee industry that focuses on the supply chain activities, from plantation, post-harvest processing, roasting, to coffee distribution to end consumers. To compete with other players in the coffee industry, Koperasi Kopi Wonosalam needs a risk management effort. This research was conducted to implement risk management by identifying, analyzing, and handling supply chain activity risks in Koperasi Kopi Wonosalam. The study identified 23 supply chain business process activities, including 3 activities in the plan and source process, 16 activities in the make process, and 4 activities in the deliver process, using the Supply Chain Operations Reference (SCOR) model. The House of Risk (HOR) method was used to analyze the risk management of this research, which consists of two phases. In the first phase, 50 risk events were identified, with 13 risk events in the plantation and harvesting process, 13 risk events in the post-harvest processing process, 3 risk events in the sorting process, 10 risk events in the roasting process, 6 risk events in the grinding process, and 9 risk events in the marketing and sales process. In the second phase, 21 risk prevention actions were taken to reduce the likelihood of risk events. Furthermore, the study recommended the development of Standard Operating Procedures (SOP) for Occupational Safety and Health (OSH) and the design of a cherry coffee sorting mechanism based on its color.
