Abstract

Industri pangan merupakan salah satu sektor paling krusial dalam menghadapi berbagai tantangan sosial, ekonomi, dan lingkungan yang dimana ketiganya merupakan aspek kontribusi pada penerapan strategi keberlanjutan perusahaan. Peran industri pangan tentunya tidak jauh dari kontribusi usaha kecil dan menengah (UKM) yang menjadi pemasok bahan baku, produsen, serta penyedia jasa distribusi dan penjualan. Namun, saat ini masih banyak UKM di Indonesia yang menghadapi tantangan dalam mengintegrasikan aspek sustainability pada supply chain management (SCM) khususnya food supply chain (FSC). Sehingga, penelitian ini bertujuan untuk menganalisis praktik FSC yang ditinjau melalui perspektif pembangunan berkelanjutan dengan peran mediasi SSCM pada UKM Pangan di Indonesia. Penelitian kuantitatif ini menggunakan data primer dari kuesioner yang diberikan kepada pelaku UKM. Sejumlah 100 responden valid diterima dan diolah menggunakan SmartPLS versi 4.0. Hasil penelitian menunjukkan bahwa sustainable development, terutama dalam aspek ekonomi, memiliki pengaruh yang signifikan terhadap praktik FSC pada UKM pangan di Indonesia, tetapi tidak berpengaruh pada aspek sosial dan lingkungan. Sehingga, SSCM memiliki pengaruh penting dalam memediasi ketiga aspek tersebut untuk mendorong praktik FSC. Faktanya, hasil penelitian menyatakan bahwa SSCM tidak dapat memediasi aspek sosial dalam mendorong praktik FSC, namun dapat memediasi secara parsial pada aspek ekonomi dan memediasi secara penuh pada aspek lingkungan. Oleh karena itu, penelitian ini diharapkan dapat memberikan UKM Pangan hal-hal yang perlu diperhatikan baik dari segi aspek sosial, ekonomi dan lingkungan untuk perkembangan sustainability dalam menunjang praktik FSC

The food industry is one of the most crucial sectors in facing various social, economic, and environmental challenges, all three contributing aspects to the implementation of the company's sustainability strategy. The role of the food industry is certainly not far from the contribution of small and medium enterprises (SMEs) which are suppliers of raw materials, producers, and providers of distribution and sales services. Currently, there are still many SMEs in Indonesia face challenges in integrating sustainability aspects into supply chain management (SCM), especially food supply chains (FSC). So, this study aims to analyze FSC practices reviewed through the perspective of sustainable development with the mediating role of SSCM in Food SMEs in Indonesia. This quantitative research uses primary data from questionnaires given to SMEs. A total of 100 valid respondents were received and processed using Smart PLS version 4.0. The results of the study show that sustainable development, especially in the economic aspect, has a significant effect on FSC practices in food SMEs in Indonesia, but has no effect on social and environmental aspects. So, SSCM is important in mediating these three aspects to promote FSC practice. In fact, research results state that SSCM cannot negotiate social aspects in promoting FSC practices but can mediate partially on economic aspects and fully mediate on environmental aspects. Therefore, this research is expected to be able to provide Food SMEs with things that need to be considered in terms of social, economic, and environmental aspects for sustainable development in supporting FSC practices.
