Abstract

Tempe adalah makanan olahan kedelai yang banyak dikonsumsi oleh masyarakat Indonesia. Dalam pembuatan tempe tersebut, para pengrajin masih menggunakan metode tradisional, dengan diletakkannya tempe di tempat terbuka yang terpapar cahaya dari lampu maupun matahari. Berdasarkan pernyataan tersebut, penelitian ini bertujuan untuk mengetahui pengaruh pencahayaan terhadap laju pertumbuhan jamur pada tempe, mengetahui pengaruh lampu UV-C dan grow light terhadap jamur pada tempe, dan mengetahui perbedaan jamur pada tempe setelah dipaparkan dengan lampu UV-C dan grow light. Terdapat 5 variasi perlakuan, yaitu tanpa menggunakan lampu, dengan lampu UV-C dan kumbung peradiasi besar, dengan lampu UV-C kumbung peradiasi kecil, lampu grow light kumbung kecil, dan tempat terbuka dengan lampu grow light. Kelima sampel diletakkan di masing – masing variasi yang dilakukan penyinaran selama 5 hari. Data yang didapatkan berupa gambar sampel akan diolah dengan pengolahan citra agar diketahui perbedaan sampel. Tempe yang dipaparkan lampu UV-C akan terhambat laju pertumbuhan jamurnya, dan tempe yang dipaparkan dengan lampu grow light akan matang lebih cepat. Hal ini dikarenakan lampu UV-C memiliki kemampuan germicidal yang merusak sel – sel pada jamur dan jamur tersebut akan mati. Jamur yang mati mengakibatkan pembusukan tempe yang lebih cepat dibandingkan sampel lainnya. Tempe yang dipaparkan dengan lampu grow light matang lebih cepat dikarenakan lampu grow light tidak memiliki kemampuan germicidal seperti lampu UV-C.

Tempe is a soybean-based processed food widely consumed by the Indonesian society. In its production, artisans still employ traditional methods, by placing tempe in an open space exposed to light from lamps and the sun. Based on this statement, this research aims to investigate the influence of illumination on the rate of fungal growth in tempe, assess the effects of UV-C lamps and grow lights on the fungi in tempe, and examine the differences in fungi found in tempe after exposure to UV-C lamps and grow lights. There are five treatment variations, without the use of lamps, with UV-C lamps in a large incubator, with UV-C lamps in a small incubator, with grow lights in a small incubator, and placed in an open space with grow lights. Each of the five samples is placed in its respective treatment variation and exposed to illumination for a duration of 5 days. The data obtained, in the form of sample images, will be processed using image analysis to discern any differences between the samples. Tempe exposed to UV-C lamps shows a hindered fungal growth rate, as the UV-C lamps possess germicidal capabilities that damage the fungal cells, leading to their demise. Consequently, the deceased fungi cause the tempe to decompose faster than the other samples. On the other hand, tempe exposed to grow lights matures faster because grow lights do not possess germicidal capabilities like UV-C lamps.
