Abstract

Indonesia merupakan salah satu negara penghasil kopi terbesar di dunia. Industri kopi di Indonesia mulai berkembang dan menjamur sejak tahun 2014. Jenis kopi yang banyak digemari di Indonesia antara lain arabica dan robusta dengan aroma dan rasa khas yang berbeda berdasarkan daerah asal. Rasa dan aroma pada kopi yang sudah diseduh salah satunya dibentuk pada proses pasca panen, yaitu penyangraian.
Tingkat kematangan biji kopi pada proses penyangraian menciptakan rasa dan aroma kopi yang khas dan unik. Kesempurnaan penyangraian kopi dipengaruhi oleh dua faktor, yaitu suhu dan waktu. Kisaran suhu sangrai bermacam-macam, mulai dari light dengan kisaran suhu 180℃-190℃, medium dengan kisaran suhu 191℃-200℃ derajat celcius, dan dark dengan kisaran suhu 201℃-210℃ derajat celcius, waktu dan suhu penyangraian bervariasi menyesuaikan karakter kopi dan alat.
Penulis pada tugas akhir ini menerapkan alat pengatur suhu otomatis pada pemanas mesin sangrai dengan menggunakan logika fuzzy yang bisa dikontrol melalui smartphone. Alat pengatur suhu yang akan penulis buat menggunakan Arduino UNO dengan IC mikrokontroller atmega 328 dan pemanas utamanya menggunakan infrared ceramic heater, yang merupakan pemanas dengan konsep radiasi, sehingga biji kopi yang disangrai bisa matang dengan merata.

Indonesia is one of the largest coffee-producing countries in the world. The coffee industry in Indonesia has started to develop and spread since 2014. The most popular type of coffee in Indonesia is arabica and robusta with distinct aromas and flavors that differ based on the region of origin. One of the flavors and aromas in brewed coffee is formed in the post-harvest process, namely roasting.
The maturity level of coffee beans in the roasting process creates a distinctive and unique coffee taste and aroma. The perfection of roasting coffee is influenced by two factors, namely temperature and time. The range of roasting temperatures varies, from light with a temperature range of 180-190 degrees Celsius, medium with a temperature range of 191-200 degrees Celsius, and dark with a temperature range of 201-210 degrees Celsius, the roasting time and temperature varies according to the character of the coffee and the tool.
In this final project, the author applies an automatic temperature control device on a roasting machine heater using fuzzy logic that can be controlled via a smartphone. The temperature control device that the author will make uses an Arduino UNO with an ATmega 328 microcontroller IC, with fuzzy logic that uses temperature for input the main heater uses an infrared ceramic heater, which is a heater with the concept of radiation, so that the roasted coffee beans can cook evenly.
