Abstract
Deteksi gelatin pada sampel permen lunak menggunakan sensor QCM termodifikasi polianilin/nanopartikel nikel telah dilakukan. Sensor QCM dimodifikasi menggunakan polianilin secara elektropolimerisasi. Modifikasi sensor kemudian dilanjutkan dengan pelapisan nanopartikel nikel secara layer by layer. Sensor QCM yang telah termodifikasi diuji terlebih dahulu pada standar gelatin sapi dan gelatin babi. Respon pergeseran frekuensi negatif dihasilkan pada pengujian standar gelatin sapi, sedangkan respon positif dihasilkan pada pengujian standar gelatin babi. Pengujian sensor QCM termodifikasi polianilin/nanopartikel nikel dilanjutkan untuk mendeteksi empat sampel permen lunak dengan kode A, B, C, D. Hasil pengujian menunjukkan pergeseran frekuensi negatif untuk sampel A dan B. Pergeresan frekuensi negatif mengindikasikan adanya kandungan gelatin sapi dalam sampel A dan B. Hasil pengujian untuk sampel C dan D menunjukkan pergeseran frekuensi positif. Pergeseran positif tersebut menunjukkan adanya dugaan kandungan gelatin babi pada sampel C dan D.

Gelatine detection in soft candy sample using QCM modified polyaniline/nickel nanoparticle sensor has been done. QCM sensor modified using aniline with electrpolymerization. Sensor modification proceed by nickel nanoparticle coating with layer by layer. First, modified sensor tested with bovine gelatine and porcine gelatine standart. Response of negative frequency shifting resulted from bovine gelatine standart, while positive response resulted from porcine gelatine standart. Testing of the polyaniline/nickel nanoparticle modified QCM sensor continued to detect four candy samples coded A, B, C, and D. The results shows negative shifting for sample A and B. Negative frequency shifting indicates the containing of bovine gelatin. The testing results of sample C and D shows positive shifting which also suspected of containing porcine gelatine.
