Abstract

Perkembangan industri pengolahan makanan di Indonesia semakin meningkat tiap tahun nya. Kondisi ini dipicu oleh permintaan konsumen terhadap olahan makanan yang semakin beragam. Salah satu industri pengolahan makanan di Indonesia adalah PT So Good Food Wonoayu Sidoarjo. Perusahaan ini melakukan aktivitas produksi yang menghasilkan limbah. Salah satu limbah yang dihasilkan adalah limbah padat seperti jeroan, bulu, bangkai ayam, serta beberapa jenis sampah domestik seperti karton, plastik, dan kemasan sosis yang tidak memenuhi standar atau reject. PT So Good Food Wonoayu Sidoarjo, mengambil langkah proaktif untuk mengelola dan memanfaatkan limbah tersebut agar dapat menjadi nilai tambah bagi perusahaan. Salah satu tindakan yang dilakukan adalah dengan menjual limbah padat tersebut kepada komunitas lokal yang berada di sekitar pabrik. Limbah padat yang dihasilkan ini digunakan oleh komunitas lokal sebagai sumber penghidupan berkelanjutan atau sustainable livelihood. Langkah ini menyebabkan limbah yang sebelumnya dianggap sebagai sumber masalah bagi lingkungan dan masyarakat di sekitar dapat berubah menjadi aset dan juga modal penghidupan yang mampu untuk memberdayakan. Penelitian ini menggunakan metode kualitatif dengan pendekatan studi kasus. Penelitian ini menggunakan beberapa teknik dalam pengumpulan data seperti observasi partisipatif yang mengharuskan peneliti melakukan observasi secara langsung, wawancara mendalam, dan studi pustaka/dokumen. Hasil dari penelitian ini menunjukkan bahwa untuk memperoleh sustainable livelihood maka komunitas lokal perlu menerapkan strategi untuk mengelola aset penghidupan yang digunakan untuk menunjang aktivitas mereka dalam pemanfaatan limbah padat PT So Good Food Wonoayu Sidoarjo.

The development of the food processing industry in Indonesia is increasing every year. This condition is triggered by consumer demand for processed foods that are increasingly diverse. One of the food processing industries in Indonesia is PT So Good Food Wonoayu Sidoarjo. The company conducts production activities that generate waste. One of the waste generated is solid waste such as offal, feathers, chicken carcasses, as well as several types of domestic waste such as cartons, plastics, and sausage packaging that does not meet standards or rejects. PT So Good Food Wonoayu Sidoarjo, takes proactive steps to manage and utilize the waste so that it can be an added value for the company. One of the actions taken is to sell the solid waste to local communities around the factory. The solid waste generated is used by the local community as a source of sustainable livelihood. This step causes waste that was previously considered a source of problems for the environment and surrounding communities to turn into assets and also livelihood capital that is able to empower. This research uses a qualitative method with a case study approach. This research uses several techniques in data collection such as participatory observation which requires researchers to make direct observations, in-depth interviews, and literature/document studies. The results of this study show that in order to obtain sustainable livelihoods, local communities need to implement strategies to manage livelihood assets that are used to support their activities in utilizing solid waste from PT So Good Food Wonoayu Sidoarjo.
