Abstract

Permintaan terhadap produk pangan dengan prinsip teknologi olah minimal meningkat, terutama dalam pemrosesan buah-buahan dan sayuran, karena makanan yang mengalami sedikit pengolahan cenderung memiliki kandungan nutrisi yang lebih tinggi dan lebih alami. Salah satu komoditas pertanian yang melimpah di Indonesia adalah buah mangga. Produksi mangga di provinsi Jawa Timur mencapai 1,59 juta ton, yang setara dengan sekitar 48,42% dari total produksi nasional (BPS, 2022). Untuk menanggapi hal tersebut, penelitian dilakukan berfokus pada perancangan sistem refrigerasi dengan menerapkan aplikasi Controlled Atmosphere Storage (CAS) untuk penanganan produk hortikultura. Analisis kinerja termal dan distribusi suhu udara dilakukan untuk memahami kinerja dari sistem. Hasil penelitian menunjukkan sistem beroperasi dengan baik, terdapat 6 periode aktif non-aktif selama pengoperasian 5 jam 42 menit. Sistem refrigerasi yang dirancang dengan beban pendinginan sebesar 133,025 Watt, mampu mencapai suhu target sesuai dengan Ashrae Handbook untuk penanganan buah mangga sebesar 13°C, dalam waktu 56 menit dari awal proses pendinginan. Tekanan tinggi, maksimum mencapai 7,8 Bar, sedangkan pada tekanan rendah, nilai minimum mencapai 3,14 Bar. Terjadi penurunan Coefficient of Performance (COP) seiring penurunan suhu ruangan dengan nilai rata-rata 3,45. Nilai arus terbaca rata-rata di angka 0,94 Ampere, dan didapatkan nilai rata rata daya untuk kompressor sebesar 166,5 Watt. Informasi hasil monitoring kinerja thermal sistem refrigerasi pada tampilan dashboard, dapat terbaca dengan baik. Terdapat tampilan hasil pembacaan sensor suhu, tekanan, arus, daya dan dilengkapi dengan perhitungan nilai COP serta grafik pembacaan data secara realtime

Demand for food products with minimal processing technology principles is increasing, especially in the processing of fruits and vegetables, because foods that undergo minimal processing tend to have higher nutritional content and are more natural. One of the abundant agricultural commodities in Indonesia is mangoes. Mango production in East Java province reached 1.59 million tons, which is equivalent to around 48.42% of total national production (BPS, 2022). To respond to this, research was conducted focusing on designing a refrigeration system by implementing the Controlled Atmosphere Storage (CAS) application for handling horticultural products. Analysis of thermal performance and air temperature distribution is carried out to understand the performance of the system. The research results show that the system operates well, there are 6 active and non-active periods during operation of 5 hours 42 minutes. The refrigeration system, which is designed with a cooling load of 133,025 Watts, is able to reach the target temperature according to the Ashrae Handbook for handling mangoes of 13°C, within 56 minutes from the start of the cooling process. At high pressure, the maximum reaches 7.8 Bar, while at low pressure, the minimum value reaches 3.14 Bar. There was a decrease in the Coefficient of Performance (COP) as the room temperature decreased with an average value of 3.45. The average current value was read at 0.94 Amperes, and the average power value for the compressor was 166.5 Watts. Information on the results of monitoring the thermal performance of the refrigeration system on the dashboard display can be read well. There is a display of temperature, pressure, current, power sensor readings and is equipped with COP value calculations and real-time data reading graphs
