Abstract
Asam laktat adalah cairan pekat (sirup) tak berwarna yang dimanfaatkan dalam industri makanan dan minutan, salah satunya adalah dapat digunakan sebagai bahan aditif pembuatan roti. Pabrik Asam Laktat dari Tongkol Jagung dengan Proses Fermentasi ini direncanakan berlokasi di Kediri, Jawa Timur pada tahun 2010 dengan kapasitas 3600 kg asam laktat/hari. Proses pembuatan asam laktat terdiri dari 3 proses, yaitu proses pre-treatment, fermentasi, dan pemumian. Pada proses pre-treatment, tongkol jagung dihidrolisa menjadi xylose dengan katalis H2S04 4,4% pada suhu 100°C dan tekanan 1 atm, dan kemudian xylose dihidrolisa menjadi glukosa dengan katalis enzim selulase pada suhu 5ifC dan tekanan 1 atm. Pada proses fermentasi, glukosa difermentasi oleh bakteri laktobasillus delbruecki menjadi asam laktat pada suhu 45°C dan tekanan 1 atm. Pada proses pemurnian, asam laktat dimurnikan untuk mendapatkan kemurnian asam laktat 50%. Kapasitas pabrik asam laktat yang mencapai 3600 kg/hari membutuhkan bahan baku tongkol jagung sebesar 9282,801 kg/har, larutan H2S04 4,4% sebesar 7,623xl0-3 kg/hari, enzim selulase sebesar 265,129 kg/hari, Lactobacillus delbrueckii sebesar 5,374 kg/hari. Untuk kebutuhan utilitasnya diperlukan air sanitasi sebesar 84 m3 /hari, air pend in gin sebesar 130, 798 m3/hari, air umpan boiler 13,987 m3/hari, air proses sebesar 3,431 m3/hari, dan air make up sebesar 101,910 m3/hari

Lactic acid is a colorless, concentrated liquid (syrup) that is used in the food and beverage industry, one of which is that it can be used as an additive for making bread. The Lactic Acid Factory from Corn Cobs with the Fermentation Process is planned to be located in Kediri, East Java in 2010 with a capacity of 3600 kg of lactic acid/day. The process of making lactic acid consists of 3 processes, namely the pre-treatment, fermentation and fermentation processes. In the pre-treatment process, corn cobs are hydrolyzed into xylose with a 4.4% H2S04 catalyst at a temperature of 100°C and 1 atm pressure, and then xylose is hydrolyzed into glucose with a cellulase enzyme catalyst at a temperature of 5ifC and a pressure of 1 atm. In the fermentation process, glucose is fermented by the bacteria Lactobacillus delbruecki into lactic acid at a temperature of 45°C and a pressure of 1 atm. In the purification process, lactic acid is purified to obtain lactic acid purity of 50%. The capacity of the lactic acid factory which reaches 3600 kg/day requires corn cob raw materials of 9282,801 kg/day, 4.4% H2S04 solution of 7,623xl0-3 kg/day, cellulase enzyme of 265,129 kg/day, Lactobacillus delbrueckii of 5,374 kg/day. For utility needs, 84 m3/day of sanitary water is required, 130,798 m3/day of cooling water, 13,987 m3/day of boiler feed water, 3,431 m3/day of process water, and 101,910 m3/day of make up water
