Abstract

Cabai (Capsicum frutescens L) merupakan salah satu sayuran dengan tingkat permintaan pasar yang tinggi. Cabai memiliki karakteristik dengan kandungan air yang tinggi, sehingga menyebabkan proses pembusukan yang lebih cepat. Selama dalam penyimpanan pascapanen, dapat menyebabkan penyusutan bobot cabai karena hilangnya kadar air. Sedangkan dalam proses pendistribusian ke konsumen memerlukan mekanisme yang panjang sehingga dibutuhkan proses penyimpanan yang baik. Berdasarkan permasalahan tersebut, penelitian ini bertujuan untuk membuat prototype sistem kontrol temperatur pada Controlled Atmosphere Storage (CAS) guna menjaga kualitas dan memperpanjang masa simpan cabai. CAS dapat menyimpan buah dan sayuran dengan mengendalikan kondisi ruangan sesuai kebutuhan udara spesifik komoditas cabai yang ada pada storage. Kondisi ruangan yang dikendalikan ini berupa temperatur dan kelembapan menggunakan sensor DS18B20 sebagai pembaca temperatur dan HR202 sebagai pembaca kelembapan, kemudian hasil pembacaan akan dikirimkan ke ESP32 sebagai mikrokontrolernya. Dari ESP32 ini, akan mengirimkan perintah kepada aktuator yaitu kompresor untuk mengendalikan kondisi temperatur dan humidifier untuk mengatur kelembapan di dalam storage box. Pada penelitian ini, cabai dapat disimpan dan dilakukan uji perbandingan dengan perlakuan di dalam kulkas, di lingkup ruang terbuka (ambient temperature), dan di dalam CAS. Cabai diamati selama 3 hari, 4 hari, dan 7 hari lalu diambil data pengukuran berat untuk mengetahui susut bobotnya. Dengan adanya CAS, penurunan bobot cabai memiliki tingkat yang rendah dan juga mendapatkan kualitas paling baik.

Chili (Capsicum frutescens L) is one of the vegetables with high market demand. Chili has the characteristic of having a high water content, which causes a faster spoilage process. During post-harvest storage, it can cause a reduction in the weight of the chilies due to loss of water content. Meanwhile, the distribution process to consumers requires a long mechanism, so a good storage process is needed. Based on these problems, this research aims to create a prototype temperature control system for Controlled Atmosphere Storage (CAS) to maintain quality and extend the shelf life of chilies. CAS can store fruit and vegetables by controlling room conditions according to the specific air requirements of the chili commodities in storage. The room conditions are controlled in the form of temperature and humidity using the DS18B20 sensor as a temperature reader and HR202 as a humidity reader, then the reading results will be sent to the ESP32 as the microcontroller. From the ESP32, it will send commands to the actuator, namely the compressor to control temperature conditions and the humidifier to regulate humidity in the storage box. In this research, chilies can be stored and carried out comparative tests with treatment in the refrigerator, at ambient temperature, and in CAS. The chilies were observed for 3 days, 4 days and 7 days and then weight measurement data was taken to determine the weight loss. With CAS, the weight loss of chilies is low and the quality is the best.
