Abstract
Sentra Wisata Kuliner (SWK) Bratang Binangun merupakan salah satu dari 25 SWK di Surabaya yang masih belum memiliki IPAL. Dalam kegiatan sehari-hari, air limbah yang dihasilkan dari SWK Bratang Binangun berasal dari kegiatan memasak, proses pencucian, serta dari toilet. Air limbah yang dihasilkan tersebut, apabila tidak diolah dengan baik dapat mencemari lingkungan di sekitar SWK Bratang Binangun. Oleh karena itu, diperlukan perencanaan IPAL & SPAL meliputi biaya investasi yang diperlukan beserta prosedur operasional yang tepat guna memastikan pengolahan limbah berjalan dengan baik. Dalam perencanaannya, pembangunan IPAL mempertimbangkan aspek teknis di SWK Bratang Binangun. Diperlukan pengumpulan data primer ataupun data sekunder guna menunjang perencanaan pembangunan IPAL. Data primer dapat diperoleh secara langsung dengan melakukan observasi maupun analisis terhadap kondisi lapangan serta pengambilan sampel air limbah. Data sekunder yang digunakan dihimpun dari berbagai sumber. Kemudian dilakukan pengolahan data dan perencanaan IPAL dan SPAL sesuai kriteria desain. Air limbah SWK di Kota Surabaya memiliki kandungan minyak dan lemak serta beban organik yang tinggi. Dirancang unit Pre-Treatment berupa Unit Grease Trap guna menampung air limbah non kakus untuk menyisihkan kandungan minyak dan lemak. 1 Unit Bak Pengumpul untuk mengatur debit pengolahan air limbah. 1 Unit Anaerobic Baffled Reactor (ABR) dilengkapi tanki pengendapan dan 4 kompartemen dirancang untuk mengendapkan partikel padatan tersuspensi dan mengolah beban organik air limbah. Unit Biological Aerated Filter dengan 2 kompartemen dioptimalisasikan untuk mendegradasi Ammonia dalam air limbah. Kemudian lapisan biomassa yang terbawa dalam aliran air diendapkan pada Unit Bak Pengendap. Unit pengolahan terakhir yakni Unit UV Disinfection untuk menonaktifkan mikroorganisme patogen yang terkandung dalam air limbah. Guna mendukung pengolahan air limbah yang maksimal, maka dilakukan perancangan Sistem Penyaluran Air Limbah (SPAL) sepanjang 148,7 m guna menyalurkan seluruh air limbah yang dihasilkan. Total estimasi anggaran yang dibutuhkan untuk pembangunan IPAL sebesar Rp 182.290.000 dan pembangunan SPAL sebesar Rp 78.741.000. Total estimasi biaya operasional IPAL yang dibutuhkan sebesar Rp 12.453.000 setiap tahunnya.

Bratang Binangun Culinary Tourism Centre (SWK) is one of 25 SWKs in Surabaya that still does not have a Wastewater Treatment Plant. In daily activities, wastewater generated from SWK Bratang Binangun comes from cooking activities, washing processes, and from toilets. The wastewater produced, if not treated properly can contaminate the environment around SWK Bratang Binangun. Therefore, it is necessary to design a WWTP and Sewerage System including the necessary investment costs and proper operational procedures to ensure proper sewage treatment. In its design, WWTP construction considers the technical aspects of SWK Bratang Binangun. To support the construction of WWTP, it is necessary to collect primary and secondary data. Primary data can be obtained directly by observing and analysing field conditions and taking wastewater samples. Secondary data used is collected from various sources. Afterwards, data processing and design of WWTP and SPAL are carried out in accordance with the design criteria. SWK wastewater in Surabaya had a high oil and grease content and a high organic load. Therefore, Pre-Treatment Unit was designed in the form of a Grease Trap Unit to receive non�latrine wastewater for removing oil and grease content. A single Collection Tank Unit to control wastewater treatment flowrate. A single Anaerobic Baffled Reactor (ABR) Unit is equipped with a settler and 4 compartments design to settle suspended solids and treat the organic load of the wastewater. The Biological Aerated Filter Unit with 2 compartments is optimised to degrade Ammonia in wastewater. Then the biomass solids carried in the water flow is settled in the Sedimentation Tank Unit. The last treatment is the UV Disinfection unit to inactivate pathogenic microorganisms contained in wastewater. To maximised wastewater treatment, a 148,7 m long of Wastewater Distribution System (SPAL) is designed to channel all wastewater produced. The total estimated budget required for the construction of WWTP is Rp 182.290.000 and the construction of the SPAL is Rp 78.741.000. The total estimated operational cost of the WWTP required is Rp 12.453.000 per year.
