Abstract

Industri pengolahan kopi di Indonesia memiliki potensi dan berkontribusi secara signifikan terhadap perekonomian yang ada di Indonesia. Untuk dapat mempertahankan hal tersebut, diperlukan kinerja yang baik pada setiap aktor rantai pasok dan mitigasi risiko bisnis yang baik. Penelitian ini bertujuan untuk menganalisis kinerja dan risiko manajemen rantai pasok pada salah satu eksportir kopi yang ada di Jawa Timur, yaitu Kevenka Coffee. Metode pengukuran untuk menganalisis kinerja adalah Supply Chain Operations Reference (SCOR) dan untuk mengidentifikasi serta mengelola risiko menggunakan metode Failure Mode and Effects Analysis (FMEA). Pengukuran kinerja dilakukan dengan menggunakan data aktual dari perusahaan yang kemudian dilakukan perhitungan menggunakan indikator yang sudah divalidasi oleh akademisi, ahli, dan pemerintah. Nilai indikator kinerja yang berada di bawah target dilakukan analisis risiko untuk membantu meningkatkan kinerja dan mengurangi dampak negatif di perusahaan. Hasil dari penelitian ini menunjukkan bahwa Kevenka Coffee memiliki capaian kinerja sebesar 98%. Nilai tersebut merupakan nilai yang tinggi dan menunjukkan bahwa perusahaan dapat mengelola manajemen rantai pasoknya dengan baik. Capaian kinerja yang berada di bawah target terdapat pada proses source, khususnya pada aspek Cost to Source. Beberapa strategi rekomendasi diberikan sesuai dengan level risiko high risk dan medium risk yang mungkin terjadi pada aspek tersebut. Rekomendasi utama yang diberikan pada beberapa risiko yang mungkin terjadi pada Kevenka Coffee adalah mengikuti asosiasi, pameran, memaksimalkan SOP yang ada, serta memaksimalkan penggunaan teknologi dalam menjalankan bisnisnya. Penelitian ini diharapkan dapat membantu perusahaan mengetahui capaian kinerja yang didapatkan pada industri pengolahan kopi dan membuat keputusan tepat untuk mengurangi dampak negatif yang mungkin terjadi di perusahaan.

The coffee processing industry in Indonesia has potential and contributes significantly to the existing economy in Indonesia. To be able to maintain this, good performance of each supply chain actor and good business risk mitigation are required. This study aims to analyze the performance and risk of supply chain management in one of the coffee exporters in East Java, namely Kevenka Coffee. The measurement method for analyzing performance is the Supply Chain Operations Reference (SCOR) and for identifying and managing risks using the Failure Mode and Effects Analysis (FMEA) method. Performance measurement is carried out using actual data from the company which is then calculated using indicators that have been validated by academics, experts, and the government. The value of performance indicators that are below the target is carried out risk analysis to help improve performance and reduce negative impacts in the company. The results of this study show that Kevenka Coffee has a performance achievement of 98%. This value is a high value and shows that the company can manage its supply chain management well. Performance achievements that are below the target are found in the source process, especially in the Cost to Source aspect. Several recommended strategies are given according to the level of high risk and medium risk that may occur in these aspects. The main recommendations given to some of the risks that may occur at Kevenka Coffee are to participate in associations, exhibitions, maximize existing SOPs, and maximize the use of technology in running its business. This research is expected to help companies find out the performance achievements obtained in the coffee processing industry and make the right decisions to reduce negative impacts that may occur in the company.
