Abstract
Lobster air tawar (Cherax quadricarinatus) merupakan salah satu komoditas budidaya yang menjanjikan karena nilai ekonomis tinggi, dengan kandungan rendah lemak, rendah kolestrol, rendah garam dan protein yang tinggi, serta tekstur daging yang lembut, padat, lezat. Penggunaan lampu Light Emitting Diode (LED) dengan berbagai warna telah terbukti memengaruhi daya tahan hidup dan pertumbuhan juvenil lobster air tawar. Namun, penelitian yang dilakukan pada pengaruh warna cahaya lampu LED terhadap komposisi lobster air tawar untuk mutu komoditas masih sangat terbatas karena penelitian-penelitian sebelumnya berfokus pada aspek pertumbuhan dan perilaku. Pada penelitian ini digunakan variasi lampu LED warna merah, biru, dan hortisolis terhadap komposisi proksimat dan mutu organoleptik pada daging juvenil lobster air tawar (Cherax quadricarinatus). Hasil penelitian menunjukkan paparan lampu LED meningkatkan komposisi proksimat daging lobster air tawar dengan kandungan karbohidrat (2,68%) dan lemak (1,01%) tertinggi pada perlakuan lampu biru, diikuti kandungan protein (12,94%) dan abu (1,91%) tertinggi pada perlakuan lampu merah. Namun, seluruh variasi lampu LED dapat menurunkan kandungan air dengan kandungan air terendah pada perlakuan lampu biru (81,23%). Pada mutu organoleptik, lampu hortisolis lebih disukai oleh panelis pada parameter warna, bau, dan rasa dengan rata-rata nilai organoleptik masing-masing sebesar 6,87 ; 6,18 ; 6,47 termasuk kriteria “agak suka” hingga “suka”. Sementara itu, parameter tekstur lebih disukai panelis pada lampu biru dengan rata-rata nilai organoleptik sebesar 6,31 termasuk kriteria “agak suka”. Hasil analisis friedmen test menunjukkan pemberian variasi lampu memengaruhi pada mutu organoleptik (p-value <0,05). ================================================================================================================================
Crayfish is a promising aquaculture commodity because of its high economic value, with low fat, low cholesterol, low salt and high protein content, as well as soft, dense, delicious meat texture. The use of Light Emitting Diode (LED) lights with various colors has been shown to affect the survival and growth of crayfish juveniles. However, research conducted on the effect of LED light color on crayfish composition for commodity quality is still very limited because previous studies focused on aspects of growth and behavior. Therefore, this study aims to determine the effect of LED light variations on proximate composition and organoleptic quality in juvenile crayfish (Cherax quadricarinatus). This study investigated the effect of LED light color variation on the proximate composition and organoleptic quality of juvenile crayfish (Cherax quadricarinatus). The results showed that exposure to LED lights increased the proximate composition of freshwater lobster meat, with the highest carbohydrate (2.68%) and fat (1.01%) content in the blue light treatment, followed by the highest protein (12.94%) and ash (1.91%) content in the red light treatment. However, all LED light treatments reduced moisture content, with the lowest moisture content observed in the blue light treatment (81.23%). In terms of organoleptic quality, the hortisolis light was preferred by panelists for color, odor, and taste parameters, with average organoleptic value of 6.87, 6.18, and 6.47, respectively, falling within the “like slightly” to “like moderately” criteria. Meanwhile, the texture parameter was more preferred by panelists under the blue light treatment, with an average organoleptic value of 6.31, falling under the “like slightly” category. The results of the Friedman test analysis indicated that varying light treatments influenced organoleptic quality (p-value <0.05).
