Abstract
Madu adalah zat manis alami yang dihasilkan lebah dengan bahan baku nektar
bunga yang mengandung aneka zat gizi seperti karbohidrat, protein, asam amino,
vitamin, mineral, pigmen tumbuhan dan komponen aromatik. Karena mempunyai
nilai ekonomis yang cukup tinggi serta mengandung zat-zat yang unik, maka
sering terjadi pemalsuan madu. Madu dapat dipalsukan dengan berbagai cara
yaitu dengan mencampur komponen-komponen pemanis buatan alami atau
dengan memberikan gula pasir (sukrosa) ke dalam madu, sehingga berbahaya bila
diberikan pada bayi atau orang yang menderita penyakit diabetes Mellitus. Pada
penelitian ini telah dirancang dan dibuat alat untuk mengetahui kualitas madu
menggunakan polarimeter dan deret sensor gas (electronic nose). Hal ini
didasarkan pada pemutaran bidang polarisasi cahaya dimana fruktosa dan glukosa
memutar bidang polarisasi dengan besar dan arah yang berbeda. Sedangkan deret
sensor gas tin oxide semiconductor digunakan untuk mendeteksi kandungan uap
yang mudah menguap pada madu. Tiga jenis madu digunakan untuk sampel
penelitian yaitu madu randu, kopi dan karet. Pada hasil pengujian, identifikasi
aroma madu menggunakan electronic nose dan support vector machine memiliki
tingkat keberhasilan 73,33%. Sedangkan perpaduan sistem electronic nosepolarimeter
dan support vector machine untuk mengidentifikasi kualitas madu
memiliki tingkat keberhasilan 66,67%.

Honey is a natural sweetener produced by bees with the nectar of raw materials
containing various nutrients such as carbohydrates, proteins, amino acids,
vitamins, minerals, plant pigments and aromatic components. Because it has a
fairly high economic value and contains unique substances, then often occurs
adulteration of honey. Honey can be fabricated in various ways items, namely by
mixing the components of natural or artificial sweeteners to give sugar (sucrose)
into honey, so its dangerous when given to baby or people who suffer from
diabetes mellitus. This study has been designed and created a tool to determine the
quality of honey using a polarimeter and a series of gas sensors (electronic nose).
In this research has been designed and created a system to determine the quality of
honey using a polarimeter and a series of gas sensors (electronic nose). It was
based on the playing field of the polarization of the light in which fructose and
glucose rotate the plane of polarization with a large and a different direction.
Meanwhile series of tin oxide semiconductor gas sensor is used to detect the
content of volatile vapors in honey. Three types of honey used for research
samples silk-cotton honey, coffee and rubber. On the test results, odor of honey
bee identification using an electronic nose and support vector machine has a
success rate 73.33%. While using electronic nose system-polarimeter and support
vector machine to identify the quality of honey bee has a success rate 66.67%.
