Abstract
Pengeringan merupakan salah satu metode penting dalam pengawetan makanan, dan efisiensi proses pengeringan sangat dipengaruhi oleh sistem pemanas serta sirkulasi udara di dalam mesin pengering. Penelitian ini bertujuan untuk mengevaluasi pengaruh variasi bentuk penutup pada heater terhadap pola aliran udara pemanas dengan mekanisme konveksi alami pada mesin pengering makanan tipe kabin. Variasi penutup yang digunakan meliputi penutup besar, penutup kecil, dan penutup yang menempel langsung pada rak pengering. Penelitian dilakukan secara eksperimental dengan mengamati perubahan temperatur dan distribusi aliran udara dalam ruang pengering. Data diperoleh menggunakan sensor suhu, kelembapan dan kecepatan udara, lalu dianalisis untuk mengevaluasi efisiensi perpindahan panas dan kestabilan aliran udara. Hasil menunjukkan bahwa variasi penutup memberikan pengaruh signifikan terhadap distribusi temperatur, arah aliran udara, dan waktu pengeringan. Penutup besar menunjukkan nilai efisiensi tertinggi sebesar 49,04%, yang mengindikasikan bahwa desain ini mampu mengoptimalkan aliran udara panas dan meminimalkan kehilangan panas ke lingkungan. Efisiensi ini lebih tinggi dibandingkan dengan penutup kecil yang memiliki efisiensi sebesar 48,5%. Sementara itu, penutup yang menempel langsung pada rak menunjukkan efisiensi terendah yaitu 46,4%.

Drying is one of the essential methods in food preservation, and the efficiency of the drying process is strongly influenced by the heating system and air circulation within the dryer. This study aims to evaluate the effect of heater cover variations on heated airflow patterns using natural convection in a cabin-type food dryer. The tested cover variations include a large cover, a small cover, and a cover attached directly to the drying rack. The experiment observed temperature changes and airflow distribution inside the drying chamber. Data were collected using temperature, humidity and air velocity sensors, then analyzed to assess heat transfer efficiency and airflow stability. The results show that the heater cover variations significantly affected temperature distribution, airflow direction, and drying time. The large enclosure shows the highest efficiency value of 49.04%, which indicates that this design is able to optimize the flow of hot air and minimize heat loss to the environment. This efficiency is higher compared to small enclosures, which have an efficiency of 48.5%. Meanwhile, the cover that attaches directly to the rack shows the lowest efficiency at 46.4%.
