Abstract

Pemanggangan kambing guling secara manual di Yayasan Aqiqah Nurul Hayat membutuhkan tenaga yang cukup besar dan waktu yang lama sehingga pekerja mengeluhkan capek. Untuk mengurangi beban kerja manual dan meningkatkan efisiensi, penelitian ini bertujuan untuk merancang dan membangun mesin pemanggang kambing guling dengan sistem transmisi roda gigi dan rantai yang mampu memutar kambing seberat 40 kg dengan kecepatan putaran konstan sekitar 9 rpm. Metode penelitian dilakukan dengan studi literatur, observasi langsung proses pemanggangan manual di yayasan tersebut, perancangan mekanik sistem transmisi, perhitungan elemen mesin seperti motor AC, gearbox, sprocket, rantai, poros, dan bearing, serta pembuatan prototipe mesin dan pengujian kinerjanya. Beban dan torsi yang diperlukan untuk memutar kambing diukur menggunakan neraca pegas, dan performa mesin diuji berdasarkan kecepatan putaran, tingkat kebisingan, serta konsumsi listrik. Hasil penelitian menunjukkan bahwa mesin pemanggang yang dirancang berhasil memutar kambing seberat 40 kg dengan kecepatan stabil 9 rpm menggunakan motor AC 100 watt dan gearbox worm gear dengan rasio reduksi 1:60. Sistem transmisi sprocket dengan jumlah gigi sprocket penggerak 14 gigi, sprocket yang digerakkan 39 gigi dan rantai nomor 40 dengan panjang rantai 1.730 mm memberikan transmisi daya yang pas. Diameter poros 19 mm dari stainless steel 304 mampu menahan beban dan torsi kerja dengan tingkat keamanan yang memadai. Pengujian alat menunjukkan tingkat kebisingan 60–70 dB dan konsumsi listrik yang yang sesuai dengan spesifikasi motor yaitu 100 watt dengan tegangan 210 Volt dan arus sebesar 0,45 Ampere. Prediksi umur bearing A mencapai lebih dari 20.960 jam dan umur bearing B 15.909 jam, menandakan mesin layak digunakan dalam operasional usaha pemanggangan kambing guling.

Manual roasting of whole goats at Aqiqah Nurul Hayat Foundation requires considerable human effort and lengthy cooking time. To reduce manual labor and enhance efficiency, this study aims to design and build a rolling goat roasting machine using a gear and chain transmission system capable of rotating a 40 kg goat at a constant speed of approximately 9 rpm. The research method comprises literature review, direct observation of the manual roasting process at the foundation, mechanical system design of the transmission, calculation of machine elements including AC motor, gearbox, sprocket, chain, shaft, and bearings, as well as prototype fabrication and performance testing. The load and torque required to rotate the goat were measured using spring scales, and the machine’s performance was evaluated based on rotation speed, noise level, and electrical consumption. The results indicate that the designed machine successfully rotates a 40 kg goat at a stable speed of 9 rpm using a 100 watt AC motor coupled with a worm gearbox with a reduction ratio of 1:60. Sprocket transmission system with 14 teeth driving sprocket, 39 teeth driven sprocket, using a No. 40
sprocket and a 1,730-mm chain length, efficiently transmits power. The 19 mm diameter stainless steel 304 shaft withstands operational load and torque with adequate safety margins. Testing shows the noise level ranges between 60–70 dB and the electricity consumption is in accordance with the motor specifications, namely 100 watts with a voltage of 210 Volts and a current of 0.45 Amperes. Bearing lifespan predictions exceed of bearing A is more than 20,960 hours and the life of bearing B is 15,909 hours, confirming the machine’s reliability for commercial goat roasting operations.
