Abstract

Penduduk Indonesia merupakan pasar potensial untuk produk halal karena mayoritas muslim. Indonesia merupakan negara yang tercatat memiliki jumlah penduduk beragama Islam terbesar di dunia. Untuk memenuhi kebutuhan konsumen Indonesia akan produk makanan dan minuman halal, dibutuhkan kehadiran dari usaha industri. Analisis status kehalalan suatu produk pangan sangatlah penting karena adanya kemungkinan pemalsuan bahan halal dengan bahan haram yang dilakukan oleh pihak tidak bertanggungjawab karena alasan ekonomi. Oleh karena itu, dibutuhkan sertifikat halal sebagai perlindungan para konsumen. Proses sertifikasi halal melibatkan penelusuran bahan-bahan kritis halal dari produk yang disertifikasi. Dalam rangka membantu industri makanan dalam memastikan bahan yang digunakan termasuk halal, maka diajukan sistem untuk menelusuri titik kritis halal bahan penolong dan bahan tambahan serta mendeteksi nilai status kehalalan dari bahan. Deteksi dini dilakukan menggunakan model klasifikasi dengan algoritma Naïve Bayes serta Decision Tree dan pemodelan proses bisnis menggunakan perangkat lunak business process management (BPM) ProcessMaker. Pada penelitian ini digunakan model klasifikasi dengan algoritma Multinomial Naïve Bayes dan Categorical Naïve Bayes, serta Decision Tree sebagai algoritma pembanding. Dari hasil prediksi skenario pengujian, algoritma Multinomial Naïve Bayes memiliki akurasi sebesar 90%, Categorical Naïve Bayes memiliki akurasi sebesar 90%, serta Decision Tree memiliki akurasi sebesar 90%.

The Indonesian population is a potential market for halal products because the majority are Muslims. Indonesia is a country that has the largest Muslim population in the world. To meet the needs of Indonesian consumers for halal food and beverage products, the presence of industrial businesses is needed. Analysis of the halal status of a food product is very important because of the possibility of counterfeiting halal ingredients with haram substances carried out by irresponsible parties for economic reasons. Therefore, a halal certificate is needed as a protection for consumers. The halal certification process involves tracing the halal critical ingredients of the certified product. In order to assist the food industry in ensuring that the ingredients used are halal, a system is proposed to track the Halal Critical Control Point of auxiliary materials and additive materials and detect the value of the halal status of the ingredients. Early detection is carried out using a classification model with the Naïve Bayes algorithm and business process modeling using a business process management (BPM) software named ProcessMaker. Classification model for this research used Multinomial Naïve Bayes and Categorical Naïve Bayes algorithms, also Decision Tree as a comparison algorithm. From the prediction results of the test scenario, the Multinomial Nave Bayes algorithm has an accuracy of 90%, Categorical Naïve Bayes has an accuracy of 90%, and Decision Tree has an accuracy of 90%.
