Abstract
Perubahan perilaku aktivitas keseharian yang paling mencolok selama karantina pandemi adalah fenomena memasak dan makan di rumah. Studi menunjukkan bahwa jumlah waktu yang dicurahkan individu untuk mempersiapkan makanan dan memasak meningkat. Menyiapkan bahan memasak membutuhkan koordinasi fungsional dari kedua tangan, sehingga hal ini menjadi hambatan untuk orang dengan keterbatasan alat gerak atas. Sekitar 15% dari populasi global mengalami disabilitas yang menyebabkan penurunan tingkat produktivitas dalam melakukan kegiatan sehari-hari. Alat bantu atau assistive tools yang tersedia dapat membantu mengakomodasi aktivitas tersebut, namun jumlahnya masih terbatas dan sulit ditemukan di pasar Indonesia agar sesuai. Sehingga penelitian dan perancangan desain bertujuan untuk membuat papan potong yang adaptif untuk dapat mengakomodasi aktivitas memasak dengan satu tangan. Selain membina untuk hidup tanpa ketergantungan, belajar memasak mempromosikan hidup mandiri, rasa percaya diri, dan peningkatan kualitas hidup bagi penyandang disabilitas. Pengumpulan data dilakukan dengan melakukan metode in-depth interview, role-playing, studi literatur dan komparasi produk eksisting yang menghasilkan affinity diagram, CJM berdasarkan kebutuhan user. Data ini digunakan untuk mengusung konsep papan potong yang disability-friendly, adaptif, multifungsi, serta memperhatikan aspek higenitas. Pengembangan desain dilakukan dari brainstorming, benchmarking, dan prototyping yang diuji melalui usability test. Tahapan diatas kemudian menghasilkan konsep produk berupa alat papan potong dapur yang multifungsi dengan value ‘adaptive in inclusivity’, produk yang mampu mengakomodasi aktivitas memasak dan juga menjadi model assistive tools yang multifungsi digunakan oleh berbagai rentang jenis user penyandang disabilitas maupun non-disabilitas di Indonesia.

The most prevalent change in behavior of daily activities during the pandemic quarantine is the phenomenon of cooking and eating at home. Studies show that the amount of time individuals devote to preparing food and cooking is increasing. Preparing ingredients for cooking requires functional coordination of both hands, therefore this can be an obstacle for people with upper mobility limitations. About 15% of the global population has a disability which causes a decrease in the level of productivity in carrying out daily activities. The available assistive tools could help to accommodate these activities, but they are still limited in number and sources, making it difficult to find in the Indonesian market to suit them. So that research and design design aims to create an adaptive cutting board to accommodate one-handed cooking activities. In addition to fostering a life without dependence, learning to cook promotes independent living, self-confidence, and improving the quality of life for people with disabilities. Data collection is done by conducting in-depth interviews, role-playing methods, literature studies and comparisons of existing products that produce affinity diagrams, CJM based on user needs. This data is used to carry out the concept of a cutting board that is disability-friendly, adaptive, multifunctional, and pays attention to hygiene aspects. Design development is carried out from brainstorming, benchmarking, and prototyping which are tested through usability tests. The above steps then produce a product concept in the form of a multifunctional kitchen cutting board with the value of 'adaptive in inclusivity', a product that is able to accommodate cooking activities and also becomes a multifunctional assistive tool model used by various types of users with disabilities and non-disabled people in Indonesia.
