Abstract

Pabrik glucose syrup dirancang dengan memanfaatkan pati sorgum sebagai bahan baku alternatif melalui proses hidrolisis enzimatis. Pemilihan sorgum didasarkan pada ketersediaannya yang melimpah di Indonesia, ketahanannya terhadap kondisi kering, serta kandungan pati yang tinggi, sehingga berpotensi mengurangi ketergantungan impor glucose syrup. Proses produksi meliputi tahap pre-treatment bahan baku, likuifikasi pati menggunakan enzim α-amilase, sakarifikasi menggunakan enzim glukoamilase, serta tahap pemurnian yang terdiri dari filtrasi, dekolorisasi, penukaran ion, dan pemekatan. Produk akhir yang dihasilkan berupa glucose syrup dengan nilai Dextrose Equivalent (DE) sebesar 96 yang memenuhi spesifikasi industri. Pabrik dirancang beroperasi secara kontinu selama 330 hari per tahun dengan kapasitas produksi sebesar 7.000 ton per tahun. Pabrik direncanakan dibangun dalam waktu 5 tahun dengan umur operasi selama 15 tahun. Hasil perhitungan neraca massa dan energi menunjukkan bahwa proses dapat berjalan secara teknis. Analisis ekonomi menunjukkan nilai Internal Rate of Return (IRR) sebesar 17,49% yang berada di atas bunga pinjaman bank dengan waktu pengembalian modal selama 5,55 tahun, lebih kecil dari jangka waktu pinjaman 10 tahun, sehingga pabrik dinyatakan layak untuk didirikan.

The glucose syrup plant is designed to utilize sorghum starch as an alternative raw material through an enzymatic hydrolysis process. Sorghum is selected due to its abundant availability in Indonesia, high resistance to dry conditions, and high starch content, which provides potential to reduce dependence on imported glucose syrup. The production process consists of raw material pre-treatment, starch liquefaction using α-amylase, saccharification using glucoamylase, and purification stages including filtration, decolorization, ion exchange, and concentration. The final product is glucose syrup with a Dextrose Equivalent (DE) value of 96, meeting industrial quality standards. The plant is designed to operate continuously for 330 days per year with a production capacity of 7,000 tons per year. The plant is planned to be constructed over a period of 5 years with an operational lifetime of 15 years. Mass and energy balance calculations indicate that the process is technically feasible. Economic analysis shows an Internal Rate of Return (IRR) of 17.49%, which is higher than the bank loan interest rate, with a payback period of 5.55 years, shorter than the loan repayment period of 10 years, indicating that the plant is economically feasible
