Abstract
Salah satu tren bisnis minuman yang saat ini sedang berkembang dan diprediksi meningkat setiap tahun sebanyak 8,22% adalah bisnis coffee shop. Bisnis ini telah diterapkan pada foodtruck dimana menu yang disajikan adalah minuman olahan kopi berbasis espresso dan manual brew. Menu olahan tersebut membutuhkan peralatan khusus, sehingga tata letak ruang dapur perlu disesuaikan dengan alur kerja aktivitas barista untuk meningkatkan kenyamanan kerja barista dan asistennya. Selain itu, beberapa pengusaha foodtruck dengan menu kopi juga belum sesuai dengan buku panduan foodtruck yang dirilis Bekraf tahun 2018. Di sisi lain, walaupun di Indonesia sudah ada dukungan fasilitas dan infrastruktur terhadap kendaraan listrik, didukung dengan adanya Perpres No. 55 tahun 2019 mengenai percepatan program kendaraan listrik, sampai saat ini belum ada pengembangan foodtruck ke arah kendaraan listrik. Oleh karena itu, dibutuhkan pengembangan desain foodtruck untuk mendukung program pemerintah tersebut sekaligus meningkatkan kenyamanan dan efisiensi kerja pada barista. Metode yang digunakan adalah observasi, wawancara, peta pengalaman pengguna (user journey map), story board, analisis kebutuhan pengguna dilakukan pada 3 pengusaha foodtruck kopi yang ada di Indonesia. Hasil dari penelitian ini adalah desain foodtruck elektrik untuk berjualan kopi yang memiliki konsep simple, comfortable, dan warm sehingga rancangan foodtruck ini dapat mempermudah operasional foodtruck, nyaman digunakan, dan menciptakan suasana hangat bagi barista, asisten, dan pelanggan.

One of the business trend in beverages that has been growing and predicted to still growing 8,22% in Indonesia is coffee shops business. This business has been implemented in foodtrucks, it needs special equipments in order to make espresso based and manual brew products. Therefore in designing foodtruck, the placement of equipments in the kitchen layout need to be in proper work flow so that the barista and assistant can feel comfortable in working. Beside that, some of the foodtruck owner also do not meet the 2018 Foodtruck's Guide from Bekraf. In the other side, although electric vehicle fasilities and infrastructures were supported in Indonesia by Perpres number 55 of 2019 concerning in the acceleration of battery-based electric motor vehicle program for road transportation, until these days, there is no foodtruck development towards electric vehicle. Therefore, we need to develop foodtruck to support the Perpres while also enhancing comfortability of barista and assistant’s working station in the foodtruck. The observation, shadowing, deep interview, user journey map, story board, and needs analysis were used on 3 foodtruck coffee owners as the methods in the designing process. The result of this research is a electric foodtruck design for coffee-beverages-selling with the concept of simple, comfortable, and warm so that the designed foodtruck could make it easier to use, more comfortable, and create sense of warm-feeling among the owner and the customers.
