Abstract

PT Siantar Top Tbk merupakan salah satu produsen makanan ringan yang menghasilkan berbagai produk, termasuk snack “Mie Gemez Enaak”, dengan karakteristik kualitas yaitu berat berat per bungkus setelah tahap penggorengan dengan standar (16 ± 2) gram. Hasil inspeksi menunjukkan bahwa berat produk masih berada dalam batas spesifikasi, namun ditemukan fluktuasi berat yang cukup bervariasi di sekitar standar yang ditetapkan, yang mengindikasikan bahwa proses produksi belum sepenuhnya stabil secara statistik meskipun produk masih memenuhi spesifikasi. Selama ini, pengendalian kualitas dilakukan melalui pencatatan data menggunakan check sheet tanpa analisis statistik lanjutan, sehingga potensi proses tidak terkendali tidak dapat teridentifikasi secara menyeluruh. Penelitian ini bertujuan untuk mengetahui kapabilitas proses produksi, mengidentifikasi penyebab variasi, dan memberikan usulan perbaikan. Metode analisis yang digunakan meliputi peta kendali Exponentially Weighted Moving Variance (EWMV) dan peta kendali Exponentially Weighted Moving Average (EWMA), diagram Ishikawa, serta Failure Mode and Effect Analysis (FMEA). Hasil yang didapatkan dari penelitian ini menunjukkan proses sudah kapabel dimana nilai Cp = 1,60 dan Cpk = 1,47. Penyebab utama proses tidak terkendali disebabkan oleh faktor operator, kualitas bahan baku yang tidak homogen, kerusakan mesin, ketidaksesuaian metode, dan pengaruh suhu ruangan, sehingga untuk meminimalkan dan mencegah terulangnya penyebab-penyebab tersebut diusulkan perbaikan meliputi pelatihan operator, pengendalian kualitas bahan baku, pemeliharaan mesin, verifikasi ulang pemeriksaan QC, serta penyesuaian SOP terhadap kondisi aktual.

PT Siantar Top Tbk is one of the snack manufacturers that produces various products, including Snack "Mie Gemez Enaak", with a quality characteristic of weight per pack after the frying stage with a standard (16 ± 2) grams. The inspection results showed that the weight of the product was still within the specification limits, but it was found that the weight fluctuated considerably around the set standards, which indicated that the production process was not yet fully statistically stable even though the product still met the specifications. So far, quality control has been carried out through data recording using a check sheet without advanced statistical analysis, so that the potential for uncontrolled processes cannot be identified comprehensively. This research aims to determine the capabilities of the production process, identify the causes of variations, and provide suggestions for improvement. The analysis methods used included the Exponentially Weighted Moving Variance (EWMV) control map and the Exponentially Weighted Moving Average (EWMA) control map, Ishikawa diagram, and Failure Mode and Effect Analysis (FMEA). The results obtained from this study show that the process is capable where the value of Cp = 1.60 and Cpk = 1.47. The main causes of uncontrolled processes are caused by operator factors, inhomogeneous quality of raw materials, machine damage, method mismatches, and the influence of room temperature, so that to minimize and prevent the recurrence of these causes, improvements are proposed including operator training, raw material quality control, machine maintenance, re-verification of QC inspections, and adjustment of SOPs to actual conditions.
