Abstract
Pasteurisasi susu pada UMKM Taslim Milk masih mengalami masalah pada proses pemanasan yang tidak dapat mempertahankan suhu setpoint sesuai SNI sebesar 72oC. Pada Proyek Akhir ini dibuat prototype pasteurisasi susu yang mampu mempertahankan suhu pada tangki pemanas secara otomatis dengan mitra PT. Insan Sejahtera Engineering menggunakan metode PID dengan pemrograman PLC dan dimonitoring oleh SCADA. Sistem yang digunakan melakukan pemanasan susu pada tangki pemanas dengan setpoint suhu 72oC. Parameter PID yang digunakan untuk penelitian yaitu dengan nilai Kp sebesar 3,124, nilai Ki sebesar 0,074, dan nilai Kd sebesar 35,083. Kontrol suhu pada tangki pemanas dengan kontrol PID mampu mencapai setpoint dari suhu 30,15oC ke 72oC dengan waktu rise time 17 menit 52 detik, nilai overshoot sebesar 1,22oC, settling time sebesar 18 menit 4 detik dan error steady state yang tidak bisa dihitung karena sistem belum sepenuhnya berhasil. Hasil tersebut lebih baik jika dibandingkan dengan kontrol suhu pada tangki pemanas tanpa kontrol PID yang mampu mencapai setpoint dari suhu 30,24oC ke 72oC dengan waktu rise time 19 menit 8 detik dan nilai overshoot sebesar 29,45oC.

Milk pasteurization in Taslim Milk is still experiencing problems in the heating process which cannot maintain the setpoint temperature according to SNI of 72oC. In this final project, a prototype of milk pasteurization which is able to maintain the temperature in the heating tank automatically is made with PT. Insan Sejahtera Engineering uses the PID method with PLC programming and is monitored by SCADA. The system used to heat milk in a heating tank with a temperature setpoint of 72oC. The PID parameter used for this research is a Kp value of 3.124, a Ki value of 0.074, and a Kd value of 35.083. The temperature control on the heating tank with PID control is able to reach a setpoint from 30.15oC to 72oC with a rise time of 17 minutes 52 seconds, an overshoot value of 1.22oC, a settling time of 18 minutes 4 seconds and a steady state error that cannot be calculated because the system is not fully successful. These results are better than the temperature control in the heating tank without PID control which is able to reach the setpoint from 30.24oC to 72oC with a rise time of 19 minutes 8 seconds and an overshoot value of 29.45oC.
