Abstract

Proses pemurnian nira merupakan tahapan krusial dalam industri gula karena menentukan kualitas produk akhir dan efisiensi energi operasional pabrik. Laporan magang mandiri ini membahas analisis proses pengolahan tebu menjadi Gula Kristal Putih (GKP) merek "NUSAKITA" di PT Sinergi Gula Nusantara (PG Glenmore) Departemen Pengolahan, dengan fokus pada penyelesaian masalah (troubleshooting) stasiun klarifikasi nira. Penelitian dilakukan melalui simulasi jar test untuk mengevaluasi pengaruh interaksi pH awal (7,5; 7,8; dan 8,1), variasi dosis flokulan anionik (5, 6, dan 7 ppm), serta suhu operasional (80°C dan 100°C) terhadap kualitas nira jernih (clear juice). Hasil penelitian menunjukkan bahwa kondisi operasional terbaik untuk mencapai tingkat kejernihan nira sesuai standar industri (≤200 NTU) diperoleh pada pH awal 7,5, suhu pemanasan 80°C, dan dosis flokulan 6–7 ppm, dengan nilai kekeruhan (turbidity) terendah sebesar 145,10 NTU. Sebaliknya, pemanasan pada suhu 100°C secara konsisten menghasilkan nilai turbidity yang melebihi standar akibat fenomena floc breakage yang dipicu oleh energi termal berlebih. Seluruh variasi perlakuan menghasilkan nilai warna ICUMSA yang aman di bawah batas baku mutu (≤72.000 IU). Evaluasi hubungan linear antara nilai Brix dan Pol membuktikan bahwa tidak terjadi degradasi sukrosa atau reaksi inversi selama klarifikasi. Kinetika sedimentasi tercepat dicapai dalam waktu 0,32 menit pada pH 8,1 dengan dosis flokulan 7 ppm pada suhu 80°C karena efisiensi mekanisme polymer bridging polimer flokulan.

The juice clarification process is a crucial stage in the sugar industry as it directly determines final product quality and plant energy efficiency. This independent internship report discusses the analysis of sugarcane processing into premium Sugar Crystal Product (GKP) under the brand "NUSAKITA" at PT Sinergi Gula Nusantara (PG Glenmore) Processing Department, with a specific focus on troubleshooting the juice clarification unit. The study was conducted using jar test simulations to evaluate the interaction effect of initial pH (7.5, 7.8, and 8.1), anionic flocculant dosage variations (5, 6, and 7 ppm), and operational temperatures (80°C and 100°C) on the clear juice quality metrics. The experimental results revealed that the optimum operational condition to meet the industrial clarity standard (≤200 NTU) was achieved at an initial pH of 7.5, a heating temperature of 80°C, and a flocculant dosage of 6–7 ppm, yielding the lowest turbidity value of 145.10 NTU. Conversely, operating at 100°C consistently generated turbidity values exceeding the threshold due to thermal-induced floc breakage. All parameter variations successfully maintained the ICUMSA color values within safe limits below the quality standard (≤72,000 IU). Furthermore, linear stability analysis between Brix and Pol confirmed that no significant sucrose inversion or degradation occurred during clarification. The fastest sedimentation kinetics were recorded at 0.32 minutes under a basic pH of 8.1 with 7 ppm flocculant dosage at 80°C, driven by enhanced polymer bridging mechanisms.
