Abstract
Indonesia merupakan negara yang memiliki banyak varian makanan dan minuman. Beberapa makanan dan minuman tersebut memerlukan foaming creamer sebagai bahan dalam pembuatannya, seperti kopi, teh, maupun late. Foaming creamer merupakan bahan pangan berbentuk bubuk yang disajikan dalam bentuk busa atau foam untuk memberikan rasa gurih dan creamy pada minuman. Salah satu perusahaan yang memproduksi foaming creamer adalah PT X. Dalam proses produksinya, PT X memerlukan dukungan bahan baku dan energi tentunya berdampak pada lingkungan. Dampak lingkungan yang mungkin dapat terbentuk adalah potensi pemanasan global, penipisan lapisan ozon, asidifikasi, dan eutrofikasi. Untuk mengetahui nilai dampak lingkungan yang terbentuk, perlu dilakukan analisis terhadap proses produksi sepanjang daur hidup produk. Selain itu, perlu dilakukan mitigasi untuk perubahan iklim yang saat ini menjadi fokus pemerintah.
Penelitian ini bertujuan untuk menganalisa nilai dampak lingkungan dan menentukan penyebab terbesar terjadinya dampak lingkungan dari unit proses produksi foaming creamer PT X melalui pendekatan gate to gate dan pemodelan dengan software SimaPro 10.3.0.1. Penelitian diawali dengan menentukan tujuan dan ruang lingkup, selanjutnya dilakukan inventori pada tahap Life Cycle Inventory (LCI). Kemudian, dilakukan identifikasi dampak pada tahap Life Cycle Impact Assessment (LCIA) dengan menggunakan metode ReCiPe 2016 dan interpretasi data dengan menggunakan software SimaPro 10.3.0.1. Berdasarkan besaran dampak yang dihasilkan, kemudian dapat diperkirakan program perbaikan untuk mitigasi perubahan iklim yang terjadi dengan pertimbangan perusahaan dan studi literatur.
Berdasarkan penelitian yang telah dilakukan, nilai dampak lingkungan yang dihasilkan untuk memproduksi 1 ton foaming creamer menghasilkan dampak global warming sebesar 2.879,561 kg CO2 eq, terrestrial acidification sebesar 10,643 kg SO2 eq, marine eutrophication sebesar 2,8 kg N eq, freshwater eutrophication sebesar 1,684 kg P eq, dan stratospheric ozone depletion sebesar 0,009 kg CFC11 eq. Kontributor utama pada semua nilai dampak adalah pada unit mixing tank. Selain itu, potensi terjadinya perubahan iklim disebabkan karena penggunaan listrik PLN sebagai sumber energi dan penggunaan gas alam sebagai bahan bakar penunjang spray dryer. Untuk itu, direkomendasikan program berupa pemanfaatan gas buang spray dryer sebagai air preheater dan penambahan PV solar panel sebesar 500 kW.

Indonesia is a country with a wide variety of food and beverage products. Some of these products require foaming creamer as an ingredient in their preparation, such as coffee, tea, and latte. Foaming creamer is a powdered food ingredient served in the form of foam to impart a savory and creamy taste to beverages. One of the companies producing foaming creamer is PT X. In its production process, PT X requires substantial support in terms of raw materials and energy, which inevitably has an impact on the environment. The potential environmental impacts that may arise include global warming potential, ozone layer depletion, acidification, and eutrophication. To determine the magnitude of these environmental impacts, an analysis of the production process throughout the product life cycle needs to be conducted. In addition, mitigation measures are required to address climate change, which is currently a primary focus of government policy.
This study aims to analyse the environmental impact values and identify the largest contributors to environmental impact from the foaming creamer production process unit at PT X using a gate-to-gate approach and modeling with SimaPro 10.3.0.1 software. The research begins with defining the goal and scope, followed by an inventory analysis at the Life Cycle Inventory (LCI) stage. Impact identification is then carried out at the Life Cycle Impact Assessment (LCIA) stage using the ReCiPe 2016 method, with data interpretation performed using SimaPro 10.3.0.1 software. Based on the magnitude of the resulting impacts, an improvement program can be formulated to mitigate the climate change impacts that occur, taking into account both company considerations and relevant literature studies.
Based on the research conducted, the environmental impact values generated for producing 1 ton of foaming creamer are as follows: global warming impact of 2,879.561 kg CO2 eq, terrestrial acidification of 10.643 kg SO2 eq, marine eutrophication of 2.8 kg N eq, freshwater eutrophication of 1.684 kg P eq, and stratospheric ozone depletion of 0.009 kg CFC11 eq. The main contributor to all impact categories was the mixing tank unit. Furthermore, the potential for climate change is caused using PLN (state electricity company) grid electricity as an energy source and the use of natural gas as a supporting fuel for the spray dryer. Therefore, it is recommended that the company implement a program utilizing spray dryer exhaust gas as an air preheater, along with the addition of a 500 kW PV solar panel system.
