Abstract

Bakpia pathuk merupakan camilan oleh – oleh dari kota Yogyakarta. Bakpia adalah makanan ringan yang terbuat dari kacang ijo. Untuk proses pengadukan isi bakpia masih manual (menggunakan tangan) menyebabkan waktu produksi lama dan tidak efektif. Untuk meningkatkan produksi bakpia akan direncanakan sebuah mesin pengaduk adonan isi bakpia guna meningkatkan produktivitas. Untuk merealisasikan mesin pengaduk adonan isi bakpia dilakukan tahapan pelaksanaan meliputi studi literatur, perencanaan dan desain mesin. Kemudian dilakukan perhitungan, dimulai dengan mencari gaya dan daya yang terdapat disistem transmisi dan dihitung perencanaan poros, pasak dan bearing. Setelah proses perakitan maka proses selanjutnya dilakukan proses uji coba untuk mengetahui performance dari hasil rancangan. Mesin ini selanjutnya di implementasikan kepada mitra yaitu UKM minican. Dari hasil perencanaan dan perhitungan didapatkan data yaitu gaya yang dibutuhkan mesin sebesar 18 kgf dan daya sebesar 0,0364 kW. Kebutuhan daya mesin lebih besar dari hasil perencanaan sehingga daya motor dipilih yang umum dan mudah ditemui dipasaran sebesar 0,55 kW. spesifikasi mesin adonan isi bakpia menggunakan daya 0,55 kW dengan putaran 1400 rpm. Sistem transmisi yang digunakan adalah belt pulley. Pada poros motor dan gearbox terpasang pulley berdiameter 76,2 mm, dan pulley yang digerakkan berdiameter 152,4 mm. Dengan ratio gearbox 1:30, kedua pulley dihubungkan dengan V-belt type B yang panjangnya 1250mm, dengan umur belt yaitu 11869.59 jam. Poros pengaduk menggunakan bahan Stainless steel 304 dengan diameter 35mm. pasak yang digunakan berbahan ST 70 dengan kekuatan Tarik sebesar yp = 16,472kgf.mm^2. pada poros pengaduk menggunakan 2 bearing berjenis single row ball bearing dengan masing masing umur bearing A 4363634,537 jam dan bearing B 5062642,059 jam. Kapasitas mesin pengaduk 18,79. Total pembuatan 1 buah mesin pengaduk adonan isi bakpia Rp 12.035.000

To increase bakpia production, a bakpia-filled dough mixer machine will be planned to increase productivity. To realize the bakpia filling dough mixer machine, implementation stages include literature studies, planning and machine design. Then the calculation is carried out, starting with finding the force and power contained in the transmission system and calculating the design of the shaft, pegs and bearing. After the assembly process, the next process is a trial process to determine the performance of the design results. Then this machine is implemented to partners, The minican SMEs (Small & Medium-Sized Enterprises). From the results of planning and calculations, the obtained data is the force required by the engine is 18 kgf and the power is 0.0364 kW. The engine power requirement is bigger than the planning result so that the motor power is chosen which is common and easily found in the market at 0.55 kW. the specifications of the bakpia dough machine use a power of 0.55 kW with a rotation of 1400 rpm. The transmission system used is a belt pulley. The motor shaft and gearbox are mounted on a pulley with a diameter of 76.2 mm, and a driven pulley with a diameter of 152.4 mm. With gearbox ratio 1:30. both pulleys are connected by a V-belt type B which is 1250mm long, with a belt life of 11869.59 hours. The pegs used are made of ST 70 with a tensile strength of yp = 16.472kgf. mm. on the stirring shaft using 2 single row ball bearing type bearings with each ages, bearing A 4363634.537 hours and bearing B 5062642.059 hours. Mixer machine capacity is 18.79. The total manufacture of 1 piece of dough mixer machine filled with bakpia Rp 12,035,000.
