Abstract
Limbah ikan gabus (Channa striata) merupakan hasil samping pengolahan berupa kepala, kulit, dan tulang yang umumnya belum dimanfaatkan secara optimal. Limbah tersebut diketahui mengandung berbagai senyawa bioaktif, salah satunya asam lemak yang terdiri atas asam lemak jenuh dan asam lemak tidak jenuh, termasuk asam lemak esensial omega-3 dan omega-6. Asam lemak omega-3 dan omega-6 berperan dalam menjaga kesehatan kardiovaskular, memiliki aktivitas antiinflamasi, serta membantu mencegah kerusakan oksidatif. Penelitian ini bertujuan untuk mengevaluasi profil asam lemak esensial dan aktivitas antioksidan lipid limbah ikan gabus. Metode penelitian meliputi pengeringan sampel, ekstraksi lipid menggunakan metode Bligh and Dyer, analisis profil asam lemak menggunakan GC-FID (Gas Chromatography Flame Ionization Detector), serta pengujian aktivitas antioksidan menggunakan metode ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)) dan DPPH (2,2-diphenyl-1 picrylhydrazyl). Hasil penelitian menunjukkan bahwa ekstrak lipid limbah ikan gabus mengandung berbagai asam lemak esensial, meliputi kelompok omega-3 (asam α-linolenat, asam eikosatrienoat, asam eikosapentaenoat, dan asam dokosaheksaenoat) serta omega-6 (asam linoleat, asam γ-linolenat, asam eikosatrienoat, dan asam arakidonat). Pengujian menggunakan metode DPPH dan ABTS juga menunjukkan bahwa ekstrak lipid limbah ikan gabus memiliki aktivitas antioksidan pada sampel yang berasal dari Sidoarjo maupun Surabaya. Hasil penelitian ini menunjukkan bahwa limbah ikan gabus berpotensi dimanfaatkan sebagai sumber asam lemak esensial dan senyawa bioaktif yang bernilai tambah.

Snakehead fish (Channa striata) waste is a by-product of fish processing consisting of the head, skin, and bones that is generally underutilized. This waste is known to contain various bioactive compounds, including saturated and unsaturated fatty acids, particularly the essential fatty acids omega-3 and omega-6. Omega-3 and omega-6 fatty acids play important roles in maintaining cardiovascular health, exerting anti-inflammatory effects, and helping prevent oxidative damage. This study aimed to evaluate the essential fatty acid profile and antioxidant activity of lipids extracted from snakehead fish waste. The research methods included sample drying, lipid extraction using the Bligh and Dyer method, fatty acid profile analysis using GC FID (Gas Chromatography–Flame Ionization Detection), and antioxidant activity assays using the ABTS (2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)) and DPPH (2,2-diphenyl-1 picrylhydrazyl) methods. The results showed that the lipid extract of snakehead fish waste contained various essential fatty acids, including omega-3 fatty acids (α-linolenic acid, eicosatrienoic acid, eicosapentaenoic acid, and docosahexaenoic acid) and omega-6 fatty acids (linoleic acid, γ-linolenic acid, eicosatrienoic acid, and arachidonic acid). The DPPH and ABTS assays also demonstrated that the lipid extracts from both Sidoarjo and Surabaya samples exhibited antioxidant activity. These findings indicate that snakehead fish waste has the potential to be utilized as a source of essential fatty acids and other value-added bioactive compounds.
