Abstract

Industri kopi di indonesia terus mengalami peningkatan produksi, sehingga volume limbah padat kulit kopi dari proses dry processing semakin meningkat. Limbah ini berpotensi menimbulkan pencemaran karena tingginya kandungan lignoselulosa dan senyawa fenolik termasuk tanin, alkaloid, dan kafein, yang menghambat biodegradasi alami. Di sisi lain, limbah kulit kopi memiliki kandungan nutrisi dasar seperti karbohidrat, lemak, gula, serta protein sehingga berpotensi dimanfaatkan sebagai pemenuhan nutrisi dalam bahan baku pakan konsentrat ruminansia. Namun tingginya serat kasar pada limbah kulit kopi menyebabkan rendahnya nilai daya pakan. Solid state fermentation (SSF) menjadi metode yang efektif untuk meningkatkan kualitas nutrisi bahan berserat melalui aktivitas enzimatik mikroorganisme lignoselulotik. Penelitian ini bertujuan untuk mengetahui potensi limbah kulit kopi sebagai pakan ternak ruminansia melalui SSF menggunakan Rhizopus oryzae dan Trichoderma reesei, berdasarkan hasil analisis proksimat dan daya cerna pakan. Metode analisis yang digunakan adalah metode analisis proksimat untuk menganalisis kandungan nutrisi berupa kadar air, abu, serat, lemak, protein, dan karbohidrat. Serta dilakukan metode Tilley and Terry untuk menganalisis nilai kecernaan bahan kering dan kecernaan bahan organik. Hasil analisis proksimat menunjukkan bahwa perlakuan fermentasi solid state fermentation (SSF) menggunakan kombinasi R.oryzae dan T.reesei dengan rasio 1:2 (P4) merupakan perlakuan paling efektif dalam meningkatkan potensi limbah kulit kopi sebagai pakan ruminansia, ditandai dengan nilai serat kasar terendah 18,89%, bahan ekstrak tanpa nitrogen tertinggi 70,85%, dan total digestible nutrient tertinggi 64,07% di antara seluruh perlakuan yang diuji. Namun seluruh perlakuan fermentasi belum mampu meningkatkan potensi limbah kulit kopi dengan menurunkan kadar serat kasar dan meningkatan kadar protein.

The coffee industry in Indonesia continues to see an increase in production, resulting in a growing volume of solid coffee husk waste from the dry processing method. This waste has the potential to cause pollution due to its high content of lignocellulose and phenolic compounds—including tannins, alkaloids, and caffeine—which inhibit natural biodegradation. On the other hand, coffee husk waste contains essential nutrients such as carbohydrates, fats, sugars, and proteins, making it a potential source of nutrition in concentrated feed for ruminants. However, the high crude fiber content in coffee husk waste results in low feed value. Solid-state fermentation (SSF) is an effective method for improving the nutritional quality of fibrous materials through the enzymatic activity of lignocellulolytic microorganisms. This study aims to determine the potential of coffee husk waste as feed for ruminants through solid-state fermentation (SSF) using Rhizopus oryzae and Trichoderma reesei, based on the results of proximate analysis and feed digestibility. The analytical methods used included proximate analysis to determine nutrient content, specifically moisture, ash, fiber, fat, protein, and carbohydrates. Additionally, the Tilley and Terry method was employed to analyze dry matter digestibility and organic matter digestibility. The results of the proximate analysis showed that the solid-state fermentation (SSF) treatment using a combination of R. oryzae and T. reesei in a 1:2 ratio (P4) was the most effective treatment in enhancing the potential of coffee husk waste as ruminant feed, as indicated by the lowest crude fiber content of 18.89%, the highest nitrogen-free extract content of 70.85%, and the highest total digestible nutrient content of 64.07% among all the treatments tested. However, none of the fermentation treatments were able to enhance the potential of coffee husk waste by reducing crude fiber content and increasing protein content.
