Abstract

Proses pemotongan lontong kerupuk ikan pada UMKM masih dilakukan secara manual sehingga menghasilkan ketebalan irisan yang kurang seragam, produktivitas rendah, tingkat kelelahan operator yang tinggi, serta higienitas produk yang kurang terjaga. Permasalahan tersebut juga dialami oleh UMKM Kerupuk Cap Emak Gresik sehingga diperlukan mesin pemotong yang mampu meningkatkan efisiensi proses produksi. Penelitian ini menggunakan metode rancang bangun yang diawali dengan observasi lapangan, studi literatur, pengumpulan data, perancangan mesin, perhitungan elemen mesin, pemilihan komponen, fabrikasi, perakitan, serta pengujian kinerja mesin sesuai diagram alir penelitian. Mesin dirancang menggunakan sistem transmisi pulley–V belt, mekanisme Geneva Drive sebagai penghasil gerak pemotongan diskontinu, dan conveyor sebagai media pemindah hasil potongan. Hasil penelitian menunjukkan bahwa mesin berhasil direalisasikan sesuai rancangan dengan total biaya pembuatan sebesar Rp5.946.034. Pengujian kinerja menunjukkan mesin mampu menghasilkan rata-rata 15,6 potong dalam 30 detik atau setara dengan 11,2 kg/jam, sehingga mampu memenuhi target kapasitas produksi yang direncanakan yaitu 10,8 kg/jam. Mesin yang dikembangkan diharapkan dapat menjadi solusi bagi UMKM dalam meningkatkan produktivitas proses pemotongan lontong kerupuk ikan dengan sistem kerja yang lebih efektif dan efisien.

The process of cutting fish cracker dough logs in Micro, Small, and Medium Enterprises (MSMEs) is still predominantly performed manually, resulting in inconsistent slice thickness, low productivity, high operator fatigue, and inadequate product hygiene. These issues are also experienced by Kerupuk Cap Emak MSME in Gresik, highlighting the need for a cutting machine capable of improving production efficiency. This study employed a design-and-build approach consisting of field observation, literature review, data collection, machine design, machine element calculations, component selection, fabrication, assembly, and performance testing following the research flowchart. The machine was designed using a pulley–V-belt transmission system, a Geneva drive mechanism to generate intermittent cutting motion, and a conveyor to transfer the sliced products. The results indicate that the machine was successfully designed and constructed with a total manufacturing cost of IDR 5,946,034. Performance testing showed that the machine achieved an average output of 15.6 slices in 30 seconds, equivalent to 11.2 kg/h, exceeding the planned production capacity target of 10.8 kg/h. Therefore, the developed machine is expected to provide an effective and efficient solution for improving the productivity of fish cracker dough cutting processes in MSMEs.
