Abstract

Kontaminasi Mineral Oil Hydrocarbons (MOH) pada edible oils menjadi perhatian karena fraksi Mineral Oil Aromatic Hydrocarbons (MOAH) bersifat karsinogenik dan genotoksik, sedangkan Mineral Oil Saturated Hydrocarbons (MOSH) dapat terakumulasi dalam tubuh. Penelitian ini bertujuan mengidentifikasi penciri keberadaan mineral oil pada edible oils menggunakan Surface-Enhanced Raman Spectroscopy (SERS) yang dipadukan dengan analisis kemometrik. Substrat SERS dibuat dengan melapiskan Ag pada substrat Fe menggunakan metode Pulsed Laser Deposition (PLD). Sampel terdiri atas sembilan jenis edible oils, satu mineral oil, serta campuran canola oil, coconut oil, dan palm oil dengan mineral oil pada konsentrasi 1–6% (v/v). Spektrum dipraolah menggunakan Asymmetric Least Squares (AsLS), Savitzky–Golay (SG), Standard Normal Variate (SNV), dan turunan pertama, kemudian dianalisis menggunakan Principal Component Analysis (PCA), Hierarchical Cluster Analysis (HCA), serta penentuan Limit of Detection (LOD) dan Limit of Quantification (LOQ). Hasil penelitian menunjukkan bahwa rentang 1620–1790 cm⁻¹ merupakan daerah fingerprint terbaik dengan pita C=C (~1655 cm⁻¹) dan C=O (~1745 cm⁻¹) sebagai penciri utama. Metode ini mampu membedakan edible oils dan mineral oil, serta memberikan nilai LOD terendah sebesar 7,68% pada coconut oil. Penelitian ini berpotensi mendukung SDG 2 (Zero Hunger) melalui peningkatan keamanan pangan dan SDG 3 (Good Health and Well-being) melalui perlindungan masyarakat dari paparan cemaran mineral oil.

Contamination of edible oils by Mineral Oil Hydrocarbons (MOH) has become a major concern because the Mineral Oil Aromatic Hydrocarbons (MOAH) fraction is carcinogenic and genotoxic, while Mineral Oil Saturated Hydrocarbons (MOSH) can accumulate in the human body. This study aimed to identify the spectral markers of mineral oil contamination in edible oils using Surface-Enhanced Raman Spectroscopy (SERS) combined with chemometric analysis. The SERS substrate was prepared by depositing Ag onto an Fe substrate using the Pulsed Laser Deposition (PLD) method. The samples consisted of nine edible oils, one mineral oil, and mixtures of canola oil, coconut oil, and palm oil with mineral oil at concentrations ranging from 1–6% (v/v). Spectral preprocessing included Asymmetric Least Squares (AsLS) baseline correction, Savitzky–Golay (SG) smoothing, Standard Normal Variate (SNV) normalization, and first-derivative transformation. The processed spectra were analyzed using Principal Component Analysis (PCA), Hierarchical Cluster Analysis (HCA), and the determination of the Limit of Detection (LOD) and Limit of Quantification (LOQ). The results showed that the 1620–1790 cm⁻¹ region was the most representative fingerprint region, with the C=C (~1655 cm⁻¹) and C=O (~1745 cm⁻¹) bands serving as the primary spectral markers. The proposed method successfully differentiated edible oils from mineral oil and achieved the lowest LOD value of 7.68% for coconut oil. This study has the potential to support SDG 2 (Zero Hunger) by enhancing food safety and SDG 3 (Good Health and Well-being) by protecting public health from exposure to mineral oil contaminants.
