Abstract
Pengeringan merupakan tahap penting dalam produksi jamu tradisional karena berpengaruh terhadap kualitas dan masa simpan bahan baku. Penelitian ini bertujuan merancang sistem dryer untuk pengeringan bahan baku jamu, menganalisis karakteristik pengeringan berdasarkan parameter berat, temperatur, dan waktu, serta merancang rekomendasi logika kontrol untuk mendukung efektivitas sistem pengeringan. Sistem dryer dirancang menggunakan metode hot air drying dengan 10 tray, PTC Heat Fan sebagai sumber panas, DC Fan sebagai pemerata distribusi udara panas, PLC Siemens S7-1200 sebagai pengendali utama, dan sensor RTD PT100 sebagai sensor temperatur. Pengujian dilakukan pada jahe, temulawak, dan kunyit dengan kapasitas 1 kg, 2 kg, dan 3 kg pada temperatur pengeringan 50°C. Hasil penelitian menunjukkan bahwa sistem dryer mampu mengeringkan bahan baku jamu secara efektif. Jahe memiliki kadar air awal tertinggi sebesar 88,6%, temulawak 81,4%, dan kunyit 86,8%. Waktu pengeringan optimal yang diperoleh untuk jahe adalah 4 jam (1 kg) dengan kadar air akhir 11,07%, 5 jam (2 kg) dengan kadar air akhir 11,49%, dan 7 jam (3 kg) dengan kadar air akhir 11,37%. Untuk temulawak, waktu pengeringan optimal yaitu 5 jam (1 kg) dengan kadar air akhir 11,05%, 6 jam (2 kg) dengan kadar air akhir 11,17%, dan 8 jam (3 kg) dengan kadar air akhir 11,34%. Sementara itu, kunyit memerlukan waktu pengeringan optimal selama 6 jam (1 kg) dengan kadar air akhir 9,03%, 8 jam (2 kg) dengan kadar air akhir 9,18%, dan 10 jam (3 kg) dengan kadar air akhir 9,55%, sehingga seluruh hasil pengeringan memenuhi standar mutu SNI yang ditetapkan. Logika kontrol dirancang melalui tahapan tabel kebenaran, matriks, logika IF–THEN, gerbang logika, dan implementasi ladder diagram pada PLC. Hasil perancangan menunjukkan bahwa sistem mampu mengatur waktu pengeringan serta pengoperasian heater dan fan secara otomatis sesuai jenis herbal, kapasitas bahan, dan kondisi temperatur. Dengan demikian, penelitian ini berpotensi memberikan solusi bagi home industry dalam meningkatkan konsistensi kualitas produk dan efisiensi pengeringan bahan baku jamu.

Drying is a crucial stage in the production of traditional herbal medicine as it significantly affects the quality and shelf life of raw materials. This study aims to design a dryer system for drying traditional herbal raw materials, analyze the drying characteristics based on weight, temperature, and time parameters, and develop control logic recommendations to improve drying effectiveness. The dryer system was designed using the hot air drying method with 10 trays, a PTC Heat Fan as the heat source, DC Fans for uniform hot air distribution, a Siemens S7-1200 PLC as the main controller, and an RTD PT100 sensor for temperature
measurement. The experiments were conducted using ginger, temulawak (Curcuma xanthorrhiza), and turmeric with capacities of 1 kg, 2 kg, and 3 kg at a drying temperature of 50°C. The results showed that the dryer system was able to effectively dry the herbal raw materials. Ginger had the highest initial moisture content at 88.6%, followed by turmeric at 86.8% and temulawak at 81.4%. The optimal drying time for ginger was 4 hours (1 kg) with a final moisture content of 11.07%, 5 hours (2 kg) with 11.49%, and 7 hours (3 kg) with 11.37%. For temulawak, the optimal drying time was 5 hours (1 kg) with a final moisture content of 11.05%, 6 hours (2 kg) with 11.17%, and 8 hours (3 kg) with 11.34%. Meanwhile, turmeric required 6 hours (1 kg) with a final moisture content of 9.03%, 8 hours (2 kg) with 9.18%, and
10 hours (3 kg) with 9.55%, indicating that all drying results complied with the Indonesian National Standard (SNI) for moisture content. The control logic was developed through truth tables, matrices, IF–THEN logic, logic gates, and ladder diagram implementation on the PLC. The proposed control system was capable of automatically regulating the drying time and the operation of the heater and fans according to the type of herbal material, material capacity, and temperature conditions. Therefore, this study has the potential to provide a practical solution for home industries to improve product quality consistency and the efficiency of drying traditional herbal raw materials.
