Abstract

Menurut Beverage Institute Indonesia, kalori yang terkandung pada sukrosa termasuk tinggi, yaitu sebesar 4 kalori/gram. Tingginya kandungan kalori dapat mengakibatkan karies gigi dan memicu penyakit diabetes serta obesitas bila mengonsumsi sukrosa terlalu sering. Oleh karena itu, diperlukan adanya substitusi pemanis rendah kalori seperti sorbitol. Sorbitol yang dikenal juga sebagai D-glusitol adalah suatu gula alkohol yang dimetabolisme lambat oleh tubuh. Sorbitol merupakan poliol dengan tingkat kemanisan 0,6 kali relatif lebih rendah dari sukrosa dan memiliki nilai kalori yang rendah, yaitu sebesar 2,6 kalori/gram sehingga merupakan jenis gula yang aman dikonsumsi oleh penderita diabetes, obesitas, dan kariogenesis pada gigi.
Industri sorbitol dinilai strategis karena sorbitol banyak dimanfaatkan di berbagai industri, seperti industri pangan, farmasi, kosmetik, kimia, serta bidang industri lainnya. Pasar sorbitol global mencapai USD 1.244,5 juta pada tahun 2018 dan diproyeksikan mencapai USD 1.928,3 juta pada tahun 2026 dengan CAGR 5,54% pada forecast period 2019–2026. Permintaan sorbitol meningkat dari tahun ke tahun seiring dengan kesadaran masyarakat akan pentingnya memperhatikan nutrisi pada makanan dan minuman serta bahaya diabetes. Kebutuhan sorbitol nasional akan meningkat sejalan dengan pertumbuhan penduduk serta meningkatnya perkembangan dan pembangunan ekonomi Indonesia. Menurut analisa dari IHS Market, pertumbuhan konsumsi sorbitol di Indonesia antara tahun 2016–2021 meningkat lebih dari 3% per tahun.
Pati sagu dipilih sebagai bahan baku utama proses produksi sorbitol karena memiliki kandungan pati yang tinggi. Sementara itu, 85% tanaman sagu yang ada di dunia berada di Indonesia, dengan luas perkebunan sagu mencapai 5,5 juta hektar. Ketersediaan lahan dan bahan baku yang melimpah serta didukung banyaknya UMKM pati sagu diharapkan dapat memenuhi kebutuhan bahan baku pembuatan sorbitol dalam negeri, sekaligus meningkatkan kesejahteraan UMKM yang ada.
Sorbitol dapat dibuat dengan berbagai cara dari berbagai jenis bahan baku, dengan kondisi operasi serta konversi yang berbeda. Pembuatan sorbitol dari bahan baku pati melalui dua tahap proses utama, yaitu proses perubahan pati (_starch_) menjadi glukosa melalui hidrolisis enzim, di mana enzim yang digunakan yaitu α-amilase dan glukoamilase. Tahap kedua yaitu proses pengubahan glukosa menjadi sorbitol menggunakan proses hidrogenasi katalitik.
Proses pembuatan sorbitol dengan hidrogenasi katalitik dilakukan dengan mereaksikan larutan dekstrosa dan gas hidrogen bertekanan tinggi dengan menambahkan katalis nikel dalam reaktor (reaktor hidrogenasi). Gas hidrogen yang masuk dari bawah reaktor secara _bubbling_ dan larutan dekstrosa diumpankan dari atas reaktor sehingga terjadi reaksi. Proses hidrogenasi katalitik memiliki beberapa keuntungan, yaitu _yield_ yang diperoleh cukup tinggi, mencapai 95–99%, dengan waktu yang lebih cepat untuk menghasilkan sorbitol dan harga yang terjangkau. Pabrik sorbitol ini direncanakan akan didirikan di Kawasan Industri Pelintung, Pelintung, Medang Kampai, Kota Dumai, Riau, Indonesia. Pemilihan lokasi didasarkan pada ketersediaan bahan baku yang unggul, utilitas yang memadai, dan tenaga kerja. Dengan didirikannya pabrik sorbitol ini diharapkan dapat mengembangkan kawasan industri yang ada di Provinsi Riau dengan menciptakan lapangan kerja sehingga berdampak positif terhadap distribusi kesejahteraan dan pendapatan masyarakat. Hal tersebut juga dapat meningkatkan kesempatan masyarakat untuk memperoleh dan menikmati pendidikan yang pada akhirnya menghasilkan tenaga kerja yang potensial dan berkualitas di bidangnya sehingga stabilitas sosial dalam kawasan industri dapat terjamin.
Pabrik direncanakan mulai dibangun pada tahun 2023 dan mulai beroperasi pada tahun 2025\. Investasi pembangunan pabrik terbagi dari modal sendiri dengan laju inflasi 1,55% per tahun sebesar Rp169.056.748.605 dan modal pinjaman dengan suku bunga 7,95% per tahun sebesar Rp322.121.197.711,00. Total biaya produksi sorbitol sebesar Rp256.018.927.258,00 per tahun. Hasil penjualan sorbitol 70% sebesar Rp600.007.159.208,00. _Internal rate of return_ dari pabrik ini adalah 21,41% dengan _payout time_ 3 tahun dan _break-even point_ sebesar 12,73%. Pabrik ini direncanakan beroperasi secara kontinu 24 jam selama 330 hari per tahun operasi dengan rencana kapasitas produksi sebesar 60 ton/hari, dengan jumlah _foreman_ proses dan produksi sebanyak 42 orang/hari.

The high-calorie content can cause dental caries and trigger diabetes and obesity if sucrose is consumed too often. Therefore, it is necessary to substitute low-calorie sweeteners such as sorbitol. Sorbitol, also known as D-glucitol, is a sugar alcohol that is slowly metabolized by the body. Sorbitol is a polyol with a sweetness level of 0.6 times that of sucrose and has a low calorific value of 2.6 calories/gram, making it a type of sugar that is safe for consumption by people with diabetes and obesity and does not promote dental caries.
The sorbitol industry is considered strategic because sorbitol is widely used in various industries, such as the food, pharmaceutical, cosmetic, chemical, and other industrial fields. The global sorbitol market reached USD 1,244.5 million in 2018 and is projected to reach USD 1,928.3 million in 2026, with a CAGR of 5.54% during the forecast period of 2019–2026. Demand for sorbitol is increasing from year to year in line with public awareness of the importance of paying attention to nutrition in food and beverages and the dangers of diabetes. The national demand for sorbitol will increase in line with population growth and the increasing development of Indonesia's economy. According to an analysis from IHS Market, the growth of sorbitol consumption in Indonesia between 2016 and 2021 increased by more than 3% per year.
Sago starch was chosen as the main raw material for the sorbitol production process because it has a high starch content. Meanwhile, 85% of sago plants worldwide are located in Indonesia, with a sago plantation area of 5.5 million hectares. The availability of abundant land and raw materials, supported by the number of SMEs producing sago starch, is expected to meet the domestic raw material needs for sorbitol production, as well as improve the welfare of existing SMEs.
Sorbitol can be produced in various ways from different types of raw materials, with different operating conditions and conversions. The manufacture of sorbitol from starch raw materials goes through two main process stages, namely the conversion of starch into glucose through enzymatic hydrolysis, where the enzymes used are α-amylase and glucoamylase. The second stage is the conversion of glucose into sorbitol using a catalytic hydrogenation process.
The process of making sorbitol by catalytic hydrogenation is carried out by reacting a dextrose solution with high-pressure hydrogen gas by adding a nickel catalyst in the reactor (hydrogenation reactor). Hydrogen gas enters from the bottom of the reactor by bubbling, while the dextrose solution is fed from the top of the reactor so that a reaction occurs. The catalytic hydrogenation process has several advantages, namely that the yield obtained is quite high, reaching 95–99%, with a faster processing time to produce sorbitol and an affordable cost.
The sorbitol factory is planned to be established in the Pelintung Industrial Estate, Pelintung, Medang Kampai, Dumai City, Riau, Indonesia. Site selection is based on the availability of superior raw materials, adequate utilities, and labor. With the establishment of the sorbitol factory, it is expected to develop industrial areas in Riau Province by creating employment opportunities, thereby having a positive impact on the distribution of community welfare and income. This will provide greater opportunities for the community to access education, which in turn can produce potential and qualified workers in their respective fields so that social stability in the industrial estate can be maintained.
The factory is planned to start construction in 2023 and start operating in 2025. Investment in factory construction is divided into own capital, with an inflation rate of 1.55% per year, amounting to Rp169,056,748,605, and loan capital with an interest rate of 7.95% per year amounting to Rp322,121,197,711.00. The total production cost of sorbitol is Rp256,018,927,258.00 per year. The proceeds from the sale of 70% sorbitol amounted to Rp600,007,159,208.00. The internal rate of return of this factory is 21.41%, with a payout time of 3 years and a break-even point of 12.73%. This factory is planned to operate continuously for 24 hours per day and 330 days per year, with a planned production capacity of 60 tons/day and a total of 42 process and production foremen per day.
