Abstract
Industri foodservice di Indonesia tumbuh semakin pesat dan diprediksi akan mengalami pertumbuhan lebih dari 20 persen pada tahun 2019. Di Surabaya, jumlah restoran untuk segmen menengah ke atas berjumlah sekitar 600 usaha dan segmen menengah ke bawah mencapai 2000 usaha pada akhir tahun 2016. Namun pada kenyataannya, pertumbuhan jumlah bisnis restoran tersebut tidak sejalan dengan laju kinerja bisnis. Merencanakan pengadaan bahan baku yang mayoritas adalah perishable goods, menjadi tantangan serius bagi bisnis foodservice, hal ini diperparah oleh harga bahan baku yang tergolong sangat fluktuatif. Menghadapi tantangan yang terjadi serta persaingan yang semakin ketat tersebut, mengharuskan setiap bisnis untuk meningkatkan keunggulan kompetitifnya agar tetap mampu bersaing, salah satunya melalui kolaborasi rantai pasok. Kolaborasi mengharuskan perusahaan untuk menjaga pasokan bahan baku di tengah fluktuasi harga.
Penelitian ini bertujuan untuk menganalisis pengaruh atribut kemitraan terhadap kolaborasi rantai pasok, khususnya dengan supplier, dan dampak kolaborasi tersebut terhadap kinerja operasional bisnis foodservice di Surabaya. Dengan menggunakan data dari 65 sampel bisnis foodservice di Surabaya, penelitian ini menunjukkan bahwa koordinasi dan kepercayaan berpengaruh signifikan terhadap kolaborasi rantai pasok. Saling ketergantungan berpengaruh signifikan namun memiliki nilai koefisien pengaruh yang negatif. Sedangkan variabel komitmen tidak berpengaruh signifikan terhadap kolaborasi. Kolaborasi rantai pasok berpengaruh signifikan positif terhadap kinerja operasional bisnis.

Foodservice industry in Indonesia is growing rapidly and is predicted to experience growth of more than 20 percent in 2019. In Surabaya, the amount of upper-middle segment restaurants are about 600 business and the middle to lower segment restaurants are about 2000 by the end of 2016. However, in fact, the amount growth of restaurants is not in line with business performance rate. Procurement planning for raw materials, which mostly perishable goods, becomes serious challenge for foodservice businesses. The problem becomes more vicious by raw material’s price that highly fluctuated. Facing such challenges and increasingly tight competition, ensuring business to develop their competitiveness in order to remain competitive through supply chain collaboration. This collaboration ensure business to maintain their raw material supply amid price fluctuation.
This study aims to analyze the effect of partnership attributes on supply chain collaboration, especially with suppliers, and its effect on operational performance among foodservice businesses in Surabaya. Using datas from 65 sample of foodservice businesses in Surabaya, this study shown that coordination and trust affect significantly to supply chain collaboration. Interdependence affect significantly although it has reverse effect. However, commitment is not significantly affecting supply chain collaboration. Supply chain collaboration affect significantly positive to business operational performance.
