Abstract

Pengaruh sabut kelapa sebagai media tanam jamur tiram terhadap kandungan mineral dan vitamin B telah diteliti. Variasi perbandingan komposisi sabut kelapa dan kayu sengon yang digunakan adalah 0, 25, 50, 75, 100% (b/b). Jamur yang sudah tumbuh, kemudian dipanen dan dianalisis kandungan mineral dengan ICP-MS dan kandungan vitamin dengan LC-MS. Komposisi substrat pada media tanam jamur tiram mempengaruhi kandungan mineral yang terdapat dalam jamur tiram, namun tidak berpengaruh terhadap kandungan vitaminnya. Mineral yang terdapat dalam jamur tiram adalah kalium, fosfor, magnesium, kalsium, natrium, seng dan mangan. Kandungan mineral terbesar adalah kalium. Kadar kalium, fosfor, magnesium, kalsium dan seng tertinggi adalah pada jamur tiram F2 sebesar 26909 mg/kg untuk kalium, 1136 mg/kg untuk fosfor, 313 mg/kg untuk magnesium, 4346 mg/kg untuk kalsium dan 15,4 mg/kg untuk seng. Vitamin yang terdeteksi dalam jamur tiram adalah vitamin B3, vitamin B5 dan vitamin B6. ========================================================================================== The effect of coconut fiber as oyster mushroom growth medium on the contents of minerals and vitamin B had been investigated. The variations of coconut fiber and sengon wood as growth medium were 0, 25, 50, 75, 100% (w/w). The grown mushrooms were harvested and analysed the minerals contents by using ICP-MS and vitamins contens by using LC-MS. The compositions of substrate on mushroom growth medium affected the minerals contents of the oyster mushroom, but did not affect on vitamins contents. Minerals contained in the oyster mushroom were potassium, phosphorus, magnesium, calcium, sodium, zinc and manganese. F2 oyster mushroom showed the best content of potassium 26909 mg/kg, 1136 mg/kg of phosphorus, 313 mg/kg of magnesium, 4346 mg/kg of calcium dan 15,4 mg/kg for zinc. The highest mineral content was potassium. Vitamins contents of oyster mushroom were vitamin B3, vitamin B5 and vitamin B6.
