Abstract
Metode cepat untuk membedakan daging dari sapi Friesian Holstein (FH) Indonesia dan Babi Yorkshire telah dilakukan menggunakan spektrofotometer fluoresens. Aqua DM digunakan sebagai pelarut pada preparasi daging. Zat yang terekstrak pada filtrat hasil preparasi daging adalah darah. Waktu yang diperlukan untuk pengukuran adalah 2 menit 24 detik. Hasil pengukuran menunjukkan bahwa terdapat perbedaan panjang gelombang antara daging Sapi FH Indonesia dan Babi Yorkshire. Daging Sapi FH Indonesia memiliki karakteristik spektrum fluoresens dengan puncak eksitasi pada λ=297 nm serta puncak emisi pada λ=297 nm dan λ=598,5 nm. Karakteristik spektrum daging Babi Yorkshire adalah pada puncak eksitasi λ=311 nm dan puncak emisi pada λ=309 nm dan λ=621 nm. Daging campuran antara Sapi FH Indonesia dan Babi Yorkshire dengan komposisi babi 30%, 20%, 10%, 1%, dan 0,5% memiliki karakteristik spektrum fluoresens yang mengarah pada spektrum daging babi dengan puncak eksitasi dan emisi pertama yang intensitasnya out of range serta memiliki puncak emisi kedua pada λ=687 nm.==============Rapid method to distinguish Friesian Holstein (FH) Indonesian cow and Yorkshire pig meats has been carried out using fluorescence spectrophotometer. Demineralized water is used as a solvent in meat preparation. The extracted substance in meat preparation filtrat is blood. Time required for measurement is 2 minutes 24 seconds. The measurement showed that there were differents wavelength between meat FH Indonesian cow and Yorkhire pig. FH Indonesian cow meat has characteristic fluorescence spectrum at excitation peak (λ= 297 nm) and emission peak (λ=297 nm and λ=598,5 nm). Furthermore, the characteristic fluorescence spectrum of Yorkshire pig’s meat has excitation peak at λ=311 nm and emission peak at λ=309 nm and λ= 621 nm. The mixed meat between FH Indonesia cow and Yorkshire pig with 30%, 20%, 10%, 1%, and 0,5% pig composition have characteristic fluorescence spectrum which lead to the spectrum of pig meat with the first excitation peak and emission peak are out of range and the second emission peak at λ=687 nm.
