Abstract
PT. X merupakan salah satu perusahaan yang bergerak dalam bisnis ikan tuna kaleng di Indonesia. Salah satu hasil yang diproduksi yaitu produk tuna kaleng untuk human food. Meskipun perusahaan telah berupaya menjaga kualitas produknya, namun pengendalian yang dilakukan tersebut masih sebatas menghitung nilai minimum. Dalam penelitian ini pengendalian kualitas yang dilakukan menggunakan empat variabel karakteristik kualitas, antara lain histamin, kadar garam, pH, dan vakum. Pengendalian kualitas secara multivariat dilakukan dengan menggunakan peta kendali T2-hotelling dan Improved Generalized Variance. Pengendalian kualitas proses pro-duksi tuna kaleng pada fase I sudah terkendali secara statistik dalam varians prosesnya, namun belum terkendali dalam rata-rata proses-nya. Dengan menggunakan batas kendali pada fase I didapatkan pengendalian kualitas proses produksi tuna kaleng pada fase II dalam varians dan rata-rata prosesnya belum terkendali secara statistik. Hal ini mengindikasikan bahwa telah terjadi pergeseran baik dalam varians maupun rata-rata proses produksi tuna kaleng pada fase II. Selain itu juga didapatkan bahwa proses belum kapabel.

PT. X is one of the canned tuna fish companies in Indonesia. One of the products produced by PT. X is canned tuna for human food.. Although the company has tried to maintain the quality of its products, but the control just by calculating the minimum value. In this study aims to performed quality control using four variable quality characteristics, such as histamine, salt content, pH, and vacuum. Multivariate quality control is performed using T2-hotelling and Improved Generalized Variance control charts. The quality control of product X’s production process in phase I is statistically controlled in the variance of the process, yet uncontrolled in the process average. Using the control limits in phase I obtained the quality control of the product X production process in phase II in variance and the process average was not statistically controlled. This indicates that there has been a process system change in both the variance and the average production process of product X in phase II. Capability proses also not capable.
