Abstract
Proyeksi bisnis restoran dan kafe di tahun 2018 diprediksi menurun karena bertambahnya pemain baru dalam bisnis tersebut. Menurut Kabid Humas APKRINDO Jawa Timur, hal tersebut dapat diatasi dengan beberapa strategi yang perlu diantisipasi, diantaranya dengan mempertahankan jenis makanan yang ada, mempertahankan pelayanan, serta kreatif dan inovatif secara berkelanjutan untuk mengimbangi potensi bertambahnya restoran baru yang semakin bervariasi. Salah satu jenis restoran yang banyak beroperasi di Surabaya adalah restoran keluarga dengan makanan khas Indonesia. Restoran Nikmat Rasa termasuk dalam kategori restoran keluarga yang menghidangkan makanan khas Indonesia khususnya Jawa. Restoran Nikmat Rasa berencana akan membuka cabang baru di jalan Mayjend Yono Suwoyo, Surabaya Barat. Visi Nikmat Rasa adalah memperkenalkan makanan khas Indonesia khususnya Jawa dengan cara yang berbeda. Konsep Dining Experience yang diterapkan pada restoran merupakan strategi Nikmat Rasa dalam berinovasi. Dining Experience tersebut diterapkan dalam open kitchen, fleksibilitas layout dan service quality yang ada di restoran Nikmat Rasa. Metode desain interior yang digunakan dalam merancang restoran Nikmat Rasa yaitu, identifikasi masalah, pengumpulan data, analisa data, konsep desain, alternatif desain, dan desain akhir. Data yang dikumpulkan adalah data lapangan dan data literatur. Analisa data meliputi teknis dan non teknis. Konsep, alternatif desain dan desain akhir diperoleh dari hasil analisa data. Dari analisa data diharapkan dapat menghasilkan desain interior Restoran Nikmat Rasa Surabaya dengan konsep dining experience. Tujuannya agar pengunjung dapat mengetahui secara langsung kualitas makanan restoran, mendapatkan pengalaman baru dalam aktivitas makan, dan merasakan konsep yang berbeda dibandingkan restoran pada umumnya. Selain itu Restoran Nikmat Rasa juga menerapkan fleksibilitas layout pada restoran untuk meningkatkan kenyamanan dan kepuasan pelanggan.

Restaurant and café’s businesses in Indonesia are projected to be in a downslope in year 2018 due to the increasing number of a new player entering the businesses. According to The Head of Public Relation Department for East Java APKRINDO office, the said issue will be managed using several anticipated strategies, namely by way of preserving the current type of cuisine, the better standard for services, and continuously being creative and innovative in keeping up with the addition of various new restaurants. One particular issue is regarding the number of Indonesian Cuisine Family Restaurant that has been a lot operated in Surabaya. Nikmat Rasa Restaurant is a family restaurant serving Indonesian cuisine with speciality in Javanese dishes. The restaurant has planned to open a new restaurant located at Jalan Mayjend Yono Suwoyo, West Surabaya. Nikmat Rasa vision is to introduce the authentic Indonesian food with speciality in Javanese region using a different kind method of dining experience. This new concept in dining experience will be Nikmat Rasa innovation strategy. The dining experience will be found in open kitchen, flexibility in layout and service quality that currently being practiced at Nikmat Rasa Restaurant. Problem identification, data collection, data analysis, and design concept are among the design interior methods that being used in designing the restaurant. Field and literature data were used as their data collection. The data analysis includes both technical and non-technical. The design concept, alternative and final design will be achieved through the collection of data analysis. This data analysis hopefully will give the expected design interior result for Nikmat Rasa restaurant with the new dining experience concept. The purpose is to directly introduce the customer with the restaurant food quality, new experience in dining, and for them to be able to feel the whole different concept that has not been offered by other general restaurant in the area. Moreover, Nikmat rasa also brought the flexibility in their restaurant layout that will be able to increase customer comfort and satisfaction.
