Abstract

Singkong (Manihot esculenta) merupakan jenis tanaman pangan yang tidak dapat bertahan lama dan memiliki nilai tambah ekonomi yang rendah. Oleh karena itu, perlu adanya upaya mengolah singkong untuk mengatasi permasalahan tersebut salah satunya dengan melakukan proses pengeringan. Singkong yang dikeringkan dapat dimanfaatkan sebagai bahan pembuatan produk olahan yang memiliki nilai ekonomi yang lebih tinggi. Keberhasilan proses pengeringan singkong dipengaruhi berbagai faktor seperti metode pengeringan dan ukuran ketebalan bahan. Oleh karena itu, perlu dilakukan sebuah penelitian untuk mengidentifikasi apakah metode pengeringan dan ukuran ketebalan bahan berpengaruh terhadap kadar air sebagai indikator dari proses pengeringan. Penelitian ini berupa penelitian eksperimental yang dirancang menggunakan Rancangan Faktorial 2x2. Dari penelitian ini menunjukkan bahwa metode pengeringan dan ukuran ketebalan bahan berpengaruh secara signifikan terhadap kadar air pada proses pengeringan singkong.================================================Cassava (Manihot esculenta) is a food plant species that doesn’t have a long life-time and also doesn’t have much economical value. Therefore, there must be a better way of cassava processing to solve those problems such as by doing drying process. Dried cassava can be used as a raw material to produce food products which have higher economical value. The success of cassava’s drying process are affected by several factors like the drying method and also the thickness size of material. Therefore, there must be a research to identify whether the drying method and the thickness size of material are significantly affected the drying process measured by water level of dried material as an indicator of drying process. This research is an experimental research designed using 2x2 Factorial Design. This research pointed that the drying method and the thickness size of material which are used in the drying process are significantly affected the water level of dried cassava.
