Abstract
didapatkan delapan penyebab risiko dengan
persentase tertinggi. Sedangkan dari hasil analisa IMAQE-food didapatkan indikatorindikator
dari sub elemen kompleksitas proses produksi dengan persentase keefektifan
terendah. Dari kedua hasil analisa tersebut dan hubungan antar keduanya, didapatkan
parameter-parameter kritikal dalam pencapaian KPI (Key Performance Indicator) yang
menjadi indikator sistem manajemen risiko kualitas yang efektif. ========== Quality Assurance system in food industry belong to several department’s
responsibility. Food safety, as part of quality assurance system, could cause product recall
which has complexity in risk, dispensing high cost, and could impact company image.
This research offers a framework as basis for mitigation strategy which give strategic
view of quality risk management in order to decrease or eliminate quality risk in three main
perspective : supplier, manufacturer, distributor. This research analyse business processes in
supply chain, then analyse risk using House of Risk (HOR 1). It based on opinion that a
proactive supply chain risk management have to focus on preventive action, decreasing
probability og risk agent. Besides, quality assurance system effectivity also measured using
IMAQE-food (Instrument for Management Assessment and Quality Effectiveness in Food
Sector). Regarding to correlation study which done for results of HOR 1 and IMAQE-food, a
quality risk management framework was designed in suply chain scope.
HOR 1 resulted eight risk agents with highest percentation. IMAQE-food resulted
indicators from elemen of production process complexity with lowest effectivity. From those
results, a correlation study was done and resulted critical parameter in achieveing KPI (Key
Performance Indicator) as indicator of an effective risk quality management.
