Abstract

Dalam penelitian ini dilakukan pembuatan yogurt dengan penambahan bakteri Zymomonas mobilis dan gelombang audiosonik pada frekuensi 2000 dan 8000 Hz. Penelitian ini bertujuan untuk mengetahui pH dan kandungan nutrisi pada yogurt yang ditambahkan dengan bakteri Z. mobilis yang diberi paparan gelombang audiosonik. Hasil penelitian menunjukkan bahwa perlakuan dengan frekuensi yang berbeda dapat mempengaruhi kandungan nutrisi dan keasaman pada yogurt. Pada yogurt dengan penambahan bakteri dan gelombang audiosonik dengan frekuensi 2000 Hz didapatkan nilai pH 3, kadar glukosa sebesar 0,264%, kadar protein sebesar 0,331%, dan kadar lemak sebesar 16,607%, sedangkan yogurt pada frekuensi 8000 Hz didapatkan pH sebesar 2,8, kadar glukosa sebesar 0,249%, kadar protein sebsar 0,299%, dan kadar lemak sebesar 9,323%. Pada penelitian ini tidak didapatkan kondisi optimal untuk menghasilkan produk yogurt yang sesuai SNI karena setiap perlakuan menghasilkan variasi nutrisi yang berbeda.

In this study, yogurt was made by adding Zymomonas mobilis bacteria and audiosonic waves with a frequency at 2000 Hz and 8000 Hz. This study aims to determine the pH and nutritional value of yogurt during the treatment. The results showed that different frequencies can affect the nutritional value and acidity of yogurt. Yogurt which is at frequency of 2000 Hz has pH value of 3 , glucose content of 0,264%, protein content of 0,331%, and fat content of 16,607%. Whereas yogurt at a frequency of 8000 Hz obtained pH of 2,8, glucose content of 0,249%, protein content of 0,299%, and a fat content of 9,323%. In this study, the optimal conditions for producting yogurt were not obtained according to SN because each treatment produced a different variation of nutrition.
