Abstract

Fiesta chicken nugget sebagai salah satu produk frozen food PT. Charoen Pokphand Indonesia, memiliki karakteristik khusus dalam perlakuan kegiatan rantai pasoknya. Hal ini terutama pada penghindaran dari risiko yang mempengaruhi ketahanan kualitas dari produk. Manajemen risiko rantai pasok yang baik sangat diperlukan untuk menghindari gangguan proses bisnis yang timbul akibat dampak risiko tersebut. Penelitian ini bertujuan untuk mengidentifikasi risiko dan penyebab risiko yang ada pada rantai pasok, serta menentukan penyebab risiko prioritas untuk ditentukan aksi mitigasinya. Dalam mengidentifikasi risiko penelitian ini memetakan proses bisnis ke dalam skema Supply Chain Operations Reference (SCOR) sebagai dasar untuk wawancara dengan para expert judgement yang terlibat langsung dalam rantai pasok Fiesta chicken nugget. Sehingga didapatkan 102 risiko dengan 156 penyebab risikonya. Risiko dan penyebab risiko tersebut selanjutnya dianalisis menggunakan metode House of Risk (HoR), dimana metode tersebut terbagi menjadi dua tahapan. Pada tahap pertama, didapatkan 8 risiko yang memiliki tingkat dampak tinggi dengan interpretasi besar, yang terjadi pada proses source dan make serta 12 penyebab risiko dengan tingkat kemunculan sangat sering yang terjadi pada proses plan, source, dan make. Pada tahap kedua, ditemukan penyebab risiko prioritas pada rantai pasok sebanyak 39 yang menimbulkan usulan aksi mitigasi sebanyak 50. Akhirnya ditetapkan 10 usulan aksi mitigasi prioritas untuk meminimalisir risiko yang ada pada rantai pasok Fiesta chicken nugget PT. Charoen Pokphand Indonesia Plant Ngoro.

Fiesta chicken nuggets as one of the frozen food products PT. Charoen Pokphand Indonesia, has special characteristics in the treatment of supply chain activities. This is mainly on avoidance of risks that affect the durability of the quality of the product. Good supply chain risk management is needed to avoid the disruption of business processes that arise due to the impact of these risks. This study aims to identify the risks and causes of risks that exist in the supply chain, and determine the causes of priority risks to determine their mitigation actions. In identifying risk, this research maps business processes into the Supply Chain Operations Reference (SCOR) scheme as the basis for interviews with expert judgments that are directly involved in the supply chain of Fiesta chicken nuggets. So that there are 102 risks with 156 causes of risk. The risks and causes of risk are then analyzed using the House of Risk (HoR) method, where the method is divided into two stages. In the first stage, there were 8 risks that had a high level of impact with a large interpretation, which occurred in the source and make processes and 12 causes of risk with a very frequent level of occurrence that
occurs in the plan, source, and make processes. In the second stage, there were 39 causes of priority risk in the supply chain which led to 50 proposed mitigation actions. Finally 10 priority mitigation action proposals were established to minimize the risks in the Fiesta chicken nuggets supply chain PT. Charoen Pokphand Indonesia Plant Ngoro.
