Abstract
Ngancar merupakan salah satu kecamatan di Kabupaten Kediri yang
memiliki sumber pangan yang sangat beragam dari berbagai komoditas seperti
komoditas pertanian, perkebunan, peternakan, unggas, dan perikanan. Dari 5
komoditas tersebut, hasil produksi komoditas pertanian cukup berlimpah di daerah
Ngancar. Beberapa diantaranya adalah padi, jagung, ubi kayu, ubi jalar, nanas,
alpukat, dan pepaya. Namun, hasil yang berlimpah tersebut belum dimanfaatkan
secara maksimal oleh masyarakat dan pemerintah setempat. Hampir sebagian
besar dari hasil produksi komoditas tersebut dijual ke daerah lain secara langsung
tanpa melalui aktivitas pengolahan yang memberi nilai tambah. Hal ini
disebabkan minimnya jumlah pelaku usaha pengolahan di daerah tersebut dan
proses pengolahan yang dilakukan masih manual dengan peralatan yang cukup
sederhana. Potensi pertanian di Kecamatan Ngancar ditangkap sebagai peluang
untuk mendirikan sebuah industri pengolahan dalam bentuk miniplant. Sistem
produksi pada miniplant dirancang untuk mengolah bahan baku berupa buah
nanas dan jagung. Produk olahan yang dihasilkan berupa sari nanas, dodol nanas,
susu jagung dan dodol jagung. Hasil produksi miniplant direncanakan untuk
memenuhi permintaan konsumen di Jawa Timur selama 5 tahun. Perancangan
miniplant diawali dengan penentuan market share, alur proses produksi dan waktu
proses produksi tiap produk olahan. Perancangan ini juga menentukan kebutuhan
lini kerja berupa jumlah unit kerja dan tenaga kerja yang disesuaikan dengan
kebutuhan target produksi selama 5 tahun. Hasil dari penelitian ini akan
memberikan rekomendasi berupa rancangan layout miniplant dengan sistem
produksi yang efisien.

Ngancar is one of the districts in Kediri that have very diverse food
resources from various commodities such as agricultural commodities, plantation,
animal husbandry, poultry, and fishery. Five of these commodities, the production
of agricultural commodities is quite abundant in Kecamatan Ngancar. Some of
them are rice, corn, cassava, sweet potato, pineapple, avocado, and papaya. The
production of that commodities has not been fully utilized by people and the local
government. Almost all of the production of these commodities are sold to other
regions directly without going through processing activities that create value. This
is due to the minimal number of processing business in the area and the
production process was still use equipment quite simple. Agricultural potential in
the Ngancar regarded as an opportunity to build a processing industry in the form
of miniplant. Miniplant production system designed to process raw materials such
as pineapple and corn. Products produced in the form of pineapple juice,
pineapple dodol, corn milk and corn dodol. Products of the miniplant planned to
meet consumer’s demand in East Java for 5 years. The design of miniplant begins
with determining market share, production process flow and processing times for
each product. The design process also determines the needs of working lines such
as the number of units of work and number of labor adjusted for the needs of the
production target for 5 years. The results of this research will provide
recommendations the design of layout on the miniplant with efficient production
system.
