Abstract

Produk pengasapan & pemanfaatan asap untuk menjadi asap cair telah dilakukan percobaan ternyata ada kendala dalam prosesnya, oleh karena itu diperlukan perbaikan yang akan mendapatkan kelancaran proses pengasapan, dan melakukan evaluasi terhadap proses manufaktur alat pengasap ikan. Perbaikan proses pengasapan ikan dilakukan antara lain sistem saluran asap, dan posisi blower serta melakukan perhitungan ulang, biaya pembuatan, serta biaya modifikasi setelah dilakukan perancangan proses pengoperasian pengasapan ikan sehingga mendapatkan produk ikan asap & asap cair. Disimpulkan bahwa ada suatu perbedaan perubahan didalam sistem saluran, juga perubahan posisi kemiringan blower, hal ini untuk menghindari tetesan asap cair, sehingga blower tetap aman dan mempunyai lifetime yang cukup panjang. sehingga dapat menghasilkan proses pengasapan ikan & asap cair. dan kemudian didapatkan perhitungan ulang bahan baku, biaya pembuatan, dan biaya modifikasi.

The product of fumigation & utilization of smoke to become liquid smoke has been tested and during the experiment there have been obstacles in the fumigation process, therefore it is necessary to improve the fumigation process, and to evaluate the fish fogging equipment manufacturing process. In the improvement of the process of smoking the fish is done, among others, the smoke channel system, and the position of the blower as well as doing recalculation, manufacturing costs, and modification costs after the design of the process of operating the smoked fish operation so as to get smoked & liquid smoked fish products. It was concluded that there was a constraint on differences in changes in the channel system which were initially in the form of ordinary curves so that the fumigation was less than optimal and then carried out a process of modification of the fumigation channel where an elbow was added to the fumigation channel. also changes in the position of the blower where the blower was previously in a sleeping position and made modifications, namely the addition of the blower holder so that the blower position becomes seated and leaning, slightly to tilt this to avoid liquid smoke droplets that can damage the electricity in the blower, so that the blower remains safe and has a lifetime quite long. so that it can produce the process of smoked fish & liquid smoke to the maximum. and then obtained a recalculation of raw materials, manufacturing costs, and modification costs.
