Abstract
Petikemaz merupakan sarana industrial teaching bagi mahasiswa Departemen Teknik Sistem dan Industri Institut Teknologi Sepuluh Nopember. Petikemaz merupakan retail berjenis food oriented yang menjual berbagai macam produk mulai dari makanan ringan, minuman, dan es krim dengan total jenis produk mencapai 356 produk. Petikemaz hanya melakukan pemesanan kepada pemasok ketika stok persediaan produk menipis tanpa memperhatikan adanya permintaan dari masing-masing produk dan lead time pengadaan produk. Hal ini mengakibatkan terjadinya stockout serta menghasilkan total cost (ordering cost, holding cost, dan lost sales cost) yang tidak optimum. Untuk mengurangi kemungkinan terjadinya stockout, Petikemaz dapat meningkatkan frekuensi dalam melakukan pemesanan produk namun terdapat trade off dari pengambilan keputusan tersebut. Semakin sering Petikemaz melakukan pemesanan, semakin rendah modal yang diperlukan karena rata-rata inventory akan semakin kecil tetapi ordering cost akan semakin tinggi dan kemungkinan terjadinya stockout semakin rendah. Selain itu, meningkatnya frekuensi dalam melakukan pemesanan produk akan mengurangi holding cost. Penelitian Tugas Akhir ini berfokus untuk menjawab permasalahan tersebut dengan menggunakan metode joint replenishment. Pada penelitian Tugas Akhir ini, produk yang diamati yaitu sebanyak 90 produk yang terdiri dari makanan ringan dan minuman dengan distribusi data demand produk berdistribusi uniform. Pengelompokan skenario joint replenishment dilakukan berdasarkan produk yang sering dibeli secara bersamaan untuk skenario 1 dan 2, produk yang memiliki kesamaan produsen untuk skenario 3, dan produk yang memiliki interval hampir bersamaan untuk skenario 4. Penerapan model matematis EOQ diperlukan sebagai dasar dalam membuat model simulasi Monte Carlo serta dilakukan identifikasi faktor ketidakpastian yaitu demand produk dan lead time pengadaan produk. Berdasarkan hasil running simulasi diperoleh hasil bahwa mean total cost skenario 1 sebesar Rp20.569.379,98, skenario 2 sebesar Rp20.649.250,82, skenario 3 sebesar Rp20.993.165,59, dan skenario 4 sebesar Rp23.534.833,87. Dalam menentukan skenario terbaik dilakukan comparing system dengan metode ANOVA one-way dengan parameter total cost yang minimal dengan hasil yaitu skenario 1 merupakan skenario terbaik.

Petikemaz is a means of industrial teaching for Department of Industrial and Systems Engineering students. Petikemaz is a food-oriented retail which sells snacks, beverages, and ice creams with total of 356 product types. Petikemaz only place order to the supplier when the stock of the product seems low, without considering the demand and procurement lead time of each product. This leads to stockout and causing non optimum total cost (ordering cost, holding cost, and lost sales cost). To reduce possibility of stockout, Petikemaz may increase their order placing frequency. However, there are trade-offs from this decision making. The more frequent Petikemaz places orders, the lower the capital cost needed due to average inventory cost is lower, but the ordering cost is higher and the probability of stockout is lower. Moreover, the higher order frequency the lower the holding cost. This final project focuses to solve problems Petikemaz facing using joint replenishment method. In this final project the number of observed products is 90 which consist of snacks and beverages with uniformly distributed demand. The first and second scenario of joint replenishment are grouped based on products that are often purchased simultaneously, for the third scenario is based on products that have the same producers, and fourth scenario based on products with nearly concurrent interval. The application of EOQ mathematical model is required as a basis for making Monte Carlo simulation model, it was also identified the uncertainty factors which are product’s demand and product’s procurement lead time. Based on the simulation result the mean total cost for scenario 1 is Rp20,569,379.98, scenario 2 is Rp20,649,250.82, scenario 3 is Rp20,993,165.59, and scenario 4 is Rp23,534,833.87. Determination of best scenario is conducted using one-way ANOVA using minimum total cost as the parameter, it was found that the best scenario is scenario 1.
