Abstract
Dalam proses pengolahan umbi porang menjadi mie porang, terdapat proses fraksinasi atau proses mengurangi zat-zat yang tidak dibutuhkan untuk dikonsumsi, seperti kalsium oksalat. Dalam proses fraksinasi tepung porang, digunakan metode pencucian bertingkat dengan larutan etanol dan diaduk menggunakan tenaga manusia dalam waktu yang lama. Dalam proses pengolahan umbi porang menjadi mie porang, terdapat proses fraksinasi atau proses mengurangi zat-zat yang tidak dibutuhkan untuk dikonsumsi, seperti kalsium oksalat. Berdasarkan hal tersebut, perlu adanya perancangan dan mewujudkan mesin pengaduk untuk membantu dalam proses mengurangi zat yang tidak dibutuhkan khususnya kandungan kalsium oksalat pada tepung porang. Sehingga proses pengadukan tidak dilakukan dengan tenaga manusia, dapat meningkatkan produksi tepung porang dan menghasilkan tepung porang yang aman untuk dikonsumsi.
Untuk mewujudkan mesin pengaduk ini, diawali dengan observasi, perencanaan mesin perhitungan elemen mesin, pembuatan dan perakitan mesin dan dilanjutkan dengan uji coba mesin. Prinsip dasarnya menggunakan mekanisme putar dengan agitator (pengaduk). Perancanaan dalam merancang mesin pengaduk ini meliputi perencanaan daya motor, pulley-belt, poros, bearing dan pen. Setelah dihitung dan mendapatkan hasil, maka perlu dilakukan percobaan untuk mendapatkan kesimpulan dari mesin pengaduk ini.
Dari hasil perancangan dan perencanaan, didapatkan spesifikasi mesin pengaduk yaitu struktur rangka dari besi UNP kanal U, sumber penggerak motor AC dengan daya 0,75 Hp dan putaran 1430 rpm, sistem transmisi dengan pulley dan V-belt, wadah pengaduk berbahan baja ringan (mild steel) dengan kapasitas 23 liter, pengaduk (agitator) menggunakan bahan baja ringan (mild steel) dengan dimensi Ø190 mm dan tipe yang digunakan yaitu dispersed turbine dan katup jenis ball valve dengan diameter lubang 45 mm. Uji pengurangan kadar kalsium oksalat dengan mesin pengaduk ini dilakukan dua kali pengujian yaitu pengujian pertama dengan 3 tingkat pencucian dan lama pengadukan 1 jam, diperoleh hasil sebesar 1588 ppm (mg/kg) dan pengujian kedua dengan 3 tingkat pencucian dan lama pengadukan 2 jam, diperoleh hasil sebesar 694 ppm (mg/kg).

Based on this, it is necessary to design and realize a mixer machine to assist in the process of reducing unnecessary substances, especially the calcium oxalate content in porang flour. So that the mixing process is not carried out by human labor, it can increase the production of porang flour and produce porang flour that is safe for consumption.
In realizing this mixing machine, it begins with observation, planning the machine for calculating machine elements, manufacturing and assembling the machine and continuing with machine testing. The basic principle uses a rotary mechanism with an agitator (agitator). The planning in designing this mixing machine includes planning for motor power, pulley-belt, shaft, bearing and pen. After calculating and getting the results, it is necessary to conduct experiments to get conclusions from this mixer.
From the results of the design and planning, the specifications of the mixer machine are obtained, namely the frame structure of U-channel UNP iron, the driving source of the AC motor with a power of 0.75 HP and a rotation of 1430 rpm, a transmission system with pulleys and V-belts, a mixer made of mild steel (mild steel). steel) with a capacity of 23 liters, the agitator uses mild steel with dimensions of 190 mm and the type used is a dispersed turbine and a ball valve with a hole diameter of 45 mm. The calcium oxalate reduction test with this mixer was carried out twice, namely the first test with 3 washing levels and 1 hour stirring time, the results were 1588 ppm (mg/kg) and the second test with 3 washing levels and 2 hours stirring time, obtained yield of 694 ppm (mg/kg).
