Abstract

Gula merupakan salah satu bahan pangan pokok yang memiliki arti penting dan posisi yang strategis di Indonesia, karena sebagian besar masyarakat Indonesia mengkonsumsi gula. Permintaan gula terus menerus meningkat tiap tahunnya seiring dengan pertumbuhan jumlah penduduk, peningkatan daya beli masyarakat dan pertumbuhan industri yang menggunakan gula sebagai bahan bakunya. Secara umum terdapat 3 proses pemurnian nira pada pabrik gula diantaranya proses pemurnian dengan penambahan kapur tohor (defekasi), sulfitasi dan karbonatasi. Dalam perancangan pabrik gula ini akan digunakan proses sulfitasi dalam proses pemurniannya. Proses sulfitasi ini memiliki keuntungan yaitu diantara proses lainnya adalah proses ini memiliki kristalisasi yang lebih baik, selain itu massecuites yang dihasilkan lebih encer dan lebih mudah diendapkan. Kapasitas pabrik gula dari menggunakan proses sulfitasi ini adalah kapasitas 462.000 ton/tahun atau 248,02 ton/jam, beroperasi selama 168 hari/tahun; 24 jam/hari. Lokasi pabrik direncanakan berdiri di Kecamatan Padang Ratu, Kabupaten Lampung Tengah, Lampung dengan mempertimbangkan penyediaan bahan baku, utilitas, pemasaran produk dan masyarakat. Bahan baku yang digunakan adalah tebu, asam fosfat, kapur tohor, sulfur, dan flokulan. Pembuatan gula ini melalui beberapa tahapan proses, antara lain proses persiapan bahan baku, penggilingan, pemurnian, penguapan, pemasakan dan penyelesaian. Efisiensi dan optimasi proses yang dilakukan adalah penggunaan clarifier tipe LLT yang dapat mengurangi sugar loss karena memiliki retention time yang lebih cepat dari clarifier tipe Single Tray, pada kondisi pH 7 kenaikan %pol pada nira sebesar 0,41% sedangkan pada kondisi pH 8 kenaikan %pol pada nira sebesar 1,22% juga dilakukan analisa ekonomi dengan hasil nilai NPV (Net Present Value) pada tahun ke sepuluh sebesar Rp 40.312.820.074, payback period 3,16 tahun, BEP (Break Even Point) 69,5% dan IRR (Internal Rate of Return) pada tahun ke sepuluh 51%.

Sugar is one of the staple foods that has an important meaning and a strategic position in Indonesia, because most Indonesians consume sugar. The demand for sugar continues to increase every year in line with population growth, increasing people's purchasing power and the growth of industries that use sugar as their raw material. In general, there are 3 sap purification processes in sugar factories including the purification process with the addition of quicklime (defecation), sulfitation and carbonation. In the design of this sugar factory, the sulfitation process will be used in the purification process. This sulfitation process has advantages among other processes, including that this process has better crystallization, besides that are resulting massecuites are more dilute and easier to precipitate. The capacity of the sugar cane factory using this sulfitation process is a capacity of 462,000 tons/year or 248,02 tons/hour; operating for 168 days/year; 24 hours/day. The location of the factory is planned to be located in Padang Ratu District, Central Lampung Regency, Lampung by considering the supply of raw materials, utilities, product marketing and the community. The raw materials used are sugarcane, phosphoric acid, quicklime, sulphur, and flocculants. The manufacture of this sugar goes through several stages of the process, including the process of preparing raw materials, grinding, purification, evaporation, cooking and finishing. Efficiency and optimization of the process carried out is the use of LLT type clarifier which can reduce sugar loss because it has a faster retention time than Single Tray type clarifier, at pH 7 conditions the increase in %pol in sap is 0.41% while at pH 8 conditions increases %pol on the sap of 1.22% also carried out an economic analysis with the results of the NPV (Net Present Value) in the tenth year of Rp 40.312.820.074, payback period of 3.16 years, BEP (Break Even Point) 69,5% and IRR (Internal Rate of Return) in the tenth year 51%.
