Abstract

Monosodium Glutamat (MSG) adalah bahan tambahan makanan yang umum digunakan dalam berbagai produk makanan. MSG dikonsumsi untuk meningkatkan cita rasa makanan dengan bahan baku utama yaitu cane mollases, raw sugar, dan bit mollases. Pada proses produksinya membutuhkan bahan baku sebesar 81736,1 kg/jam untuk menghasilkan kemurnian kristal MSG sebesar 95%. Proses produksi MSG melibatkan beberapa tahap yaitu fermentasi, isolasi, dan pemurnian. Pada unit isolasi terdapat proses kristalisasi yang bertujuan untuk pembentukan kristal MSG dengan konsentrasi 20 gr/dl. Pada dasarnya meningkatkan konsentrasi dapat dilakukan menggunakan alat evaporator. Salah satu jenis evaporator yang efektif digunakan di industri adalah Falling Film Evaporator dengan model multiple effect yang bertujuan untuk meningkatkan efisiensi energi dari proses evaporasi yang berlangsung dengan menggunakan energi panas dari steam untuk menguapkan air. Industri akan melakukan efisiensi energi pada unit Isolasi secara keseluruhan dengan menambah proses evaporasi menggunakan evaporator double effect. Modifikasi evaporator pada unit isolasi dapat menghemat penggunaan tangki pada proses kristalisasi sehingga dapat menghemat konsumsi energi sebesar 46,7% dari kondisi eksisting, Berdasarkan perhitungan dan analisa perbandingan efisiensi energi, industri dapat menghemat 13.149.899.256 kJ/tahun dengan saving cost sebesar Rp124.709.764.964,08.

Monosodium Glutamate (MSG) is a food additive that is commonly used in various food products. MSG is consumed to enhance the taste of food with the main ingredients being cane mollases, raw sugar and beet mollases. The production process requires 81736.1 kg/hour of raw materials to produce 95% purity of MSG crystals. The MSG production process involves several stages, namely fermentation, isolation, and purification. In the isolation unit there is a crystallization process which aims to form MSG crystals with a concentration of 20 gr/dl. Basically increasing the concentration can be done using an evaporator. One type of evaporator that is effectively used in industry is the Falling Film Evaporator with a multiple effect model which aims to increase the energy efficiency of the evaporation process that takes place by using heat energy from steam to evaporate water. The industry will implement energy efficiency in the isolation unit as a whole by adding an evaporation process using a double effect evaporator. Modification of the evaporator in the isolation unit can save the use of tanks in the crystallization process so that it can save energy consumption of 46.7% from the existing conditions. Based on calculations and comparative analysis of energy efficiency, the industry can save 13,149,899,256 kJ/year with a saving cost of IDR 124,709,764 964.08.
