Abstract

Produk sayuran termasuk dalam kategori produk perishable yaitu produk yang mengalami penurunan kualitas seiring dengan berjalannya waktu. Temperatur merupakan hal penting dalam menjaga kualitas produk perishable. Jika sayuran tidak disimpan pada temperatur optimalnya, maka akan mempercepat penurunan kualitas. Pada dasarnya, Vehicle Routing Problem merupakan penentuan rute perjalan untuk meminimalkan biaya distribusi. Semakin lama sayuran berada pada perjalanan maka kualitasnya akan semakin menurun. Penelitian ini bertujuan untuk meminimalkan penurunan kualitas selama perjalanan dengan cara mengoptimalkan alokasi produk pada kompartemen kontainer berpendingin. Untuk menentukan alokasi produk yang sesuai pada kendaraan, terlebih dahulu dilakukan pembentukan rute perjalanan. Model penentuan rute perjalanan pada penelitian ini adalah Vehicle Routing Problem with Time Windows (VRPTW) dengan memperhatikan biaya penggunaan kendaraan, biaya transportasi, biaya energi, dan biaya quality loss. Rute yang terbentuk dalam VRPTW selanjutnya akan digunakan untuk menentukan alokasi produk mempertimbangkan jumlah dan jenis produk yang dibawa tiap kendaraan serta waktu sampai di konsumen yang dikunjungi. Hasil dari penelitian ini menunjukan bahwa dengan mengoptimalkan alokasi produk pada tiap kendaraan dapat menurunkan biaya quality loss sebesar 50.7%. Perubahan temperatur setting pada kontainer dari 4℃ menjadi 0℃ meningkatkan biaya quality loss sebesar 17%, jika temperatur 5℃, peningkatan biaya quality loss sebesar 51%, dan jika temperatur 8℃, peningkatan biaya quality loss sebesar 263%. Perubahan jumlah kompartemen dari 9 menjadi 3 kompartemen mampu menurunkan biaya quality loss sebesar 4%, sedangkan jika jumlah kompartemen menjadi 4, biaya quality loss menurun sebesar 8%. Semakin tinggi Quality Requirement yang ditentukan maka biaya quality loss akan semakin kecil, namun biaya penggunaan kendaraan akan semakin besar. Selain itu, utilisasi kendaraan juga akan semakin kecil.

Vegetable products were categorized as perishableproducts. Perishableproducts are the products that experienced a decrease in quality over time. Temperature is important in maintaining the quality of perishableproducts. Vegetable products have optimum specific storage temperature, if the product is not stored at its optimal temperature, then the quality losswill be faster. Basically, Vehicle Routing Problem (VRP)conducted the determination of routes that can minimize the cost of distribution. In the case of perishableproducts, the longer the product is enroute then the quality will be progressively decreased. In order to maintain and to keep the product quality received by consumers will remain good, there needs to be a determination of Quality Requirementas minimum limits of product quality received by consumers. The purpose of this research is to minimize quality lossduring travelby optimizing the products allocation on the container refrigerated compartment. To determine the right amount of products allocation on the vehicle, first thing to do is to establish the travel routeusingVehicle Routing Problem with Time Windows (VRPTW) model by considering vehicle usage costs, transportation costs, energy costs, and costs of quality loss. The route was formed in VRPTW will then be used to determine products allocation considering the kind of product carried by each vehicle and arrival time at consumers.Result showing that by optimizing product allocation on each vehicle it can reduce the cost of quality lossby 50.7%. Changes in temperature settingin containers from 4 °Cto 0 °Cincreases the cost of quality lossby 17%, if the temperature is 5 °C, the cost of quality lossis 51%, and if the temperature is 8 °C, the cost of quality lossis 263%. Changes in the number of compartments from 9 to 3 compartments can reduce the cost of quality lossby 4%, whereas if the number of compartments becomes 4, the cost of quality lossdecreases by 8%.Results showing that the higher the Quality Requirements, then the cost of quality losswill be getting smaller, but the vehicle usage costs will be even greaterand vehicle utilization will be getting smaller.
