Abstract

PT. Mitratani Dua Tujuh merupakan salah satu agroindustri yang memproduksi sayuran beku dengan skala distribusi lokal dan global. Edamame merupakan komoditas ekspor utama perusahaan. Sebagai produk agrikultur, edamame memiliki sifat perishable. Produk perishable merupakan produk yang mudah dipengaruhi oleh faktor lingkungan dan mengalami penurunan kualitas dalam proses sirkulasi dan transmisi rantai pasok. Lead time produk yang panjang dan adanya karakter perishability membuat rantai pasok edamame dihadapkan dengan beragam risiko. Manajemen risiko dalam proses rantai pasok sangat diperlukan untuk mengantisipasi gangguan proses bisnis dari dampak yang ditimbulkan oleh risiko tersebut. Tetapi, sampai saat ini, perusahaan belum menerapkan manajemen risiko. Penelitian ini bertujuan untuk memberikan usulan rancangan manajemen risiko rantai pasok dengan menggunakan metode House of Risk. Dalam prosesnya, penelitian menggunakan metode expert judgement dengan melibatkan para manajer dari enam divisi (Divisi Pemasaran, Divisi Umum dan Pengadaan, Divisi Budidaya, Divisi Pengolahan, Divisi Quality Assurance, dan Divisi Teknik). Berdasarkan hasil identifikasi risiko, didapatkan 65 risiko dengan 88 penyebab risiko berdasarkan proses utama SCOR (plan, source, make, deliver, dan return). Setelah dilakukan pengolahan pada House of Risk fase 1, didapatkan 39 prioritas penyebab risiko yang berkontribusi 80 persen dampak berdasarkan Pareto. Dari 39 risiko tersebut, dimunculkan 57 usulan aksi mitigasi dengan hasil akhir dari House of Risk fase 2 berupa 12 prioritas aksi mitigasi dengan rasio efektivitas tertinggi.

PT. Mitratani Dua Tujuh is one of agroindustries that produce frozen vegetables with a scale of local and global distribution. Edamame is the main export comodity. As an agricultural product, edamame has perishability. Perishable products are products that can be easily affected by environmental factors and encountered quality decrease or damaged by the supply chain circulation and transmission. A trade-off between the long-lead-time and the perishability may cause the supply chain of edamame facing some kind of risks. Supply chain risk management is very needed to prevent the business processes disruptions from the impact of the risks. Meanwhile, risk management has not been implemented in the company. This research aims to propose supply chain risk management by using House of Risk method. This research used expert judgement method, involving the managers of six divisions (Marketing, General and Procurement, Cultivation, Processing, Quality Assurance, and Technique). Based on the risk identification, there are 65 risk events with 88 risk agents based on SCOR main process (plan, source, make, deliver, and return). There are 39 risk agents prioritized that contribute about 80 percent to the impact based on Pareto in House of Risk phase 1. There are 57 mitigation action proposed to prevent those 39 risk agents. House of Risk phase 2 prioritize 12 mitigation action with the highest effectiveness ratio.
