Abstract

Pengaruh campuranampas tebu dengan tongkol jagung sebagai media tanam terhadap kualitas jamur tiram telah diteliti. Media tanam dibuat berupa campuran ampas tebu dan tongkol jagung dengan perbandingan komposisi yaitu 75:25 (R1), 50:50 (R2), 25:75 (R3), 100:0 (R4), dan 0:100 (R5). Jamur tiram segar yang dihasilkan selanjutnya dianalisis kualitasnya yang meliputi analisis fisik dan kandungan nutrisi. Analisis nutrisidilakukan dengan menggunakan metode termogravimetri, Kjeldahl, dan soxhletasi. Hasil analisa fisik jamur tiram menunjukkan bahwa komposisi R1memiliki massa rata-rata paling tinggi (77,17 g). Jumlah tudung paling banyak diperoleh dari komposisi R4 (13 buah), sedangkanpanjang tangkai, diameter tudung, dan ketebalan tudung paling baik diperoleh pada komposi R1 yaitu 7,8 cm, 1,36 cm, dan 10,76 cm. Dari segi nutrisi, komposisi nutrisi paling baik yaitu komposisi R4 dengan kadar air yang rendah (86,2288%), kadar abu terbesar (1,1090%), kadar protein terbesar (9,0933%) dan kadar lemak terendah (0,1199%). Kadar karbohidrat terbesar pada komposisi R3(4,2439%).Penelitian ini menunjukkan bahwa penggunaan media dengan komposisi perbandingan yang berbeda dapat mempengaruhi kualitas fisik dan nutrisi dari jamur tiram yang dihasilkan.

The effect of combination of bagasse and concorb as growth medium on white oyster mushroom nutritional values was invistigated. The composition of bagasse and concorb as growth medium were 75:25 (R1), 50:50 (R2), 25:75 (R3), 100:0 (R4), and 0:100 (R5). The fresh harvested oyster mushrooms from those compositions growth medium were examined by physical and proximate analysis (using thermo-gravimetric, Kjeldah, and Soxhlet methods). The results showed that the highest mass of oyster mushroom was obtained 77.17 g on R1, with the most amount of cap on R4 (13 caps), meanwhile, the longest stalk, widest cap‟s diameter, the thickest cap of oyster mushroom were obtained on R1 which are 7.8 cm, 10.76 cm, and 1.36 cm respectively. From the nutritional values, oyster mushroom with the best result is R4, with the lowest water content (86.2288%), the highest ash content (1.1090%), the highest protein content (9.0533%), the lowest crude fat (0.1199%).Thehighest total carbohydrat (4.2439%) were obtained from R3. This study indicated that combination of bagasse and concorb as growth medium on white oyster mushroom had effect an physical and nutrition content.
