Abstract

Sebagai negara tropis, Indonesia menghasilkan buah yang memiliki keragaman dan rasa yang cukup baik dibandingkan dengan negara tropis lainnya, buah yang dipanen harus diperlakukan secara khusus agar kualitasnya tetap terjaga saat dipasarkan. Salah satu cara yang dapat dilakukan untuk menjaga kualitas buah ialah dengan controlled atmosphere storage. Penyimpanan atmosfer terkendali (CAS) adalah suatu metode penyimpanan dengan cara mengontrol suhu, konsentrasi oksigen dan karbondioksida secara terus menerus sesuai dengan konsentrasi yang diinginkan. Tujuan dari penelitian ini adalah untuk merancang low-cost controlled atmosphere system dengan menggantikan mesin pendingin menjasi es kering sebagai media pendingin. Setting point yang telah ditentukan untuk penyimpanan buah pisang ialah 2-5% gas O2, 2-5% gas CO2 dan pada suhu 11-15oC. Bahan-bahan yang digunakan yaitu es kering sebagai media pendingin sekaligus penambah kadar CO2, gas nitrogen yang berfungsi mengurangi konsentrasi gas O2, CO2 scrubber terbuat dari Ca(OH)2 sebagai penyerap kadar gas CO2 saat melebihi setting point yang dibutuhkan dan ethylene absorbent terbuat dari zeolit dan KMnO4 berguna sebagai penyerap gas ethylene yang dihasilkan buah. Pada percobaan ini digunakan 9 kg es kering dan 4 kg buah pisang. Dari hasil percobaan diketahui bahwa buah pisang yang disimpan pada controlled atmosphere storage selama 7 hari terlihat lebih segar dibandingkan dengan tanpa controlled atmosphere storage. 9 kg es kering dapat mendinginkan storage box hingga 17 oC, gas nitrogen dapat merubah kadar O2 pada controlled atmosphere storage dari 12% menjadi 5%, es kering dan CO2 scrubber dapat mempertahankan kadar gas CO2 pada setting point dan ethylene scrubber dapat mengurangi kadar gas ethylene di dalam controlled atmosphere storage dari 4.9 ppm menjadi 3.3 ppm

As a tropical country, Indonesia produces fruit that has a variety and taste that
is quite good compared to other tropical countries, the fruit that is harvested must be
treated specifically so that its quality is maintained when marketed. One way that can be
done to maintain fruit quality is controlled atmosphere storage. Controlled atmosphere
storage (CAS) is a storage method by controlling the temperature, the concentration of
oxygen and carbon dioxide continuously according to the desired concentration. The
purpose of this study was to design a low-cost controlled atmosphere system by replacing
a cooling machine with dry ice as a cooling medium. The setting points that have been
determined for storing bananas are 2-5% O2 gas, 2-5% CO2 gas, and at a temperature of
11-15oC. The materials used are dry ice as a cooling medium as well as an increase in
CO2 levels, nitrogen gas which reduces the concentration of O2 gas, CO2 scrubber made
of Ca(OH)2 as an absorber of CO2 gas levels when it exceeds the required set point, and
ethylene absorbent made from zeolite and KMnO4 is useful as an absorber for ethylene
gas produced by fruit. In this experiment, 9 kg of dry ice and 4 kg of bananas were used.
From the experimental results, it is known that bananas stored in controlled atmosphere
storage for 7 days look fresher than those without controlled atmosphere storage. 9 kg of
dry ice can cool the storage box to 17 oC, nitrogen gas can change the O2 level in the
controlled atmosphere storage from 12% to 5%, dry ice and CO2 scrubber can maintain
CO2 gas levels at the setpoint and the ethylene scrubber can reduce ethylene gas levels
in controlled atmosphere storage from 4.9 ppm to 3.3 ppm.
